    BARBIE, thank you, but really, I amd the lucky one! SHe is the most beautiful and giving person I ever knew! Except to herself :frown:

    SHIRLEY: shopping today for tonight's SBD Moussaka, I realized how far I've strayed from the original intent! Everything from scratch, no or low sodium, GOOD oils, and much more and varied veggies! Bought buttermilk to freeze for when I need it (small batches) and am adding 1/4 lb of 97/3 ground round so Mike will be happy! I haven't used eggplant in years and I love it, nor have I used lentils since I last made lentil soup about 20 years ago! I actually am feeling more positive today, and went to the Fitness Center again, finally 2 days in a row! Somewhat changing my outlook ! I needed that! :grumble:

    BECKY, Thanks again. And Mike will be eating SBD right along with me, since it was originally designed to help prevent diabetes and insulin resistance. LAter, of course, it became all the rage, but basically it's very much the Mediterranian Diet! Healthy foods.

    PHOEBE, where is LR afb? I know I missed a lot of posts, so I haven't met CLAIRE yet, but I'm trying to cram in as much as I can and yet find time to cook and exercise AND say hello every day to all of you, my dear friends!:drinker:

    mrmk65...please, what is your name? I can't find it here and I feel funny calling you Murmansk or whatever the initials bring to mind! We have always done the same thing on family birthdays, and since I have the world's worst voice, I think they wissh I would stop the singing already! But we love doing it, especially early in the morning! So, to your dear son:

    Ok folks, I did 45 min of gardening, 16 min of yoga and 16 min wallking and I am going to shower and watch the Biggest Loser tonite.

    Oh I forgot, I went to the farm and bought large zucchini ( 50 cents ea), so now in the next couple of days I will be canning zucchini relish for hot dogs and hamburgers. The kids really love it. I also bought some beets and will make pickled beets too. I am surprising myself with all the canning. We tasted the apples today and boy do they taste good, now if the pears will ripen I will be greatful.

    :bigsmile: Becky, Jake likes Lean Cuisine and frequently fixes them for himself. They are so convenient for him so I know what you mean about the Smart Ones meals that you eat. I've had too much sodium with the Indian restaurant food. almond milk is another big sodium item, but I love it.:bigsmile:

    :flowerforyou: Oh NO Barbie....I love almond milk !!! Never drink cow milk anymore. I have tried Lean Cuisine but didn't like the taste. I have found Smart Ones to be a lot better. I don't eat them at home, only at work. Your dinner last night sounds great.:smile:

    Chris, my husband made pickled beets with hard boiled eggs this past weekend. I had one egg but mostly beets. He, however, munched down on a lot of the eggs.

    :flowerforyou: buzz, a Meditarranian diet is the way to go. We can get some healthy fats with it. Good job.

    If I go by the scales at the YMCA then I am doing very well.:bigsmile:

    Happy Wednesday!! :bigsmile: Another great day!! :flowerforyou: I did not do well at the casino and I will be taking a break from that weekly trip, it is getting too expensive. :explode: I didn't eat well yesterday and did not exercise and that makes me even more angry. :mad: I skipped lunch and dinner so when I came home I ate junk food which is definitely the wrong thing to do. :grumble: Today is a new day and you can be sure it will be a healthy day. :blushing:

    Becky, I don't know about anyone else but I weigh myself the first thing in the morning after getting out of bed and after going potty. :tongue: I strip down nude and then get on the scale and that is weight I record. After having coffee and breakfast my weight can flucuate as much as two pounds from my food and clothes. :laugh: Again I think you look great and the slower the weight comes off the longer it stays off. :wink:

    Barbie, we eat mostly market day food, but I check the label for calories and sugar and most of it is healthy. It is an easy way to have good meals portioned controlled and easy to prepare. :drinker:

    Phoebe, glad you have your phone charger so we wouldn't miss your great sense of humor. :laugh:

    Chris, I know nothing about canning but give you so much credit for doing so besides all the other activities you do. :smile: Buzz's real name is Barbara but we gave her this nickname because it suited her and it was her nickname in school. :happy: I hope your son had a great birthday, I wouldn't dare sing to anyone they would shudder in their boots.

    Buzz, prayers to your sister, I also have a sister who is not doing well but they can't give her a proper diagnosis. They have run all kinds of tests but still have no answers for her low blood counts. One doctor told her she probably has cancer somewhere but they don't know where so she said am I supposed to just wait for it to grow and kill me? She is very depressed and I don't blame her but did suggest she go to either Mayo or another cancer hospital, but she is very stubborn. :grumble: I know nothing about the south beach diet but perhaps you should go to google.com and ask any question you might have. :ohwell:

    Shirley, here's hoping for good weather this weekend, so far they say ours will be beautiful. My son and his wife are coming tomorrow from Portland Oregon for their 30th year high school class reunion so I hope the weather cooperates. :flowerforyou:

    Sorry Becky, didn't mean to turn you green. :sick: We have her come every two weeks, I guess I am a little spoiled. :blushing:

    My sister is 72 and has always been healthy, she had bypass surgery years ago because when she was having an angioplasty she had spasm and they nicked her artery which put her in cardiac arrest, she also suffered a stroke which left her with no peripheral vision on her left eye. She over came all of that and ate healthy, exercised but then this blood problem came up and she can't get any answers. Just keep her in your prayers they find out what is wrong and can fix it. :heart: :heart:

    Hey everyone, Marie is fine, just busy quiltin! Im so used to seeing a post from her daily, I guess it bugs me when I dont. So, shes ok.

    So are we. Heading to Alabama. Sandy, your sister had better get in charge of her life and get some answers. Doctors dont always have the patients best interests at heart. They have alot of kettles on the fire, and they can get distracted. IMHO.

    Buzz, I think SBD is a winner, glad you are going back to it, although your nutritionist gave you good advice.

    Somehow, it is comforting to me that I'm not the only one who does the 'eat as you please diet', and gets the results to regret it.
    im not wishing for company on my binges though! Just sayin its a struggle to get and stay healthy.

    By the way, CHRIS, I'm not a man ( know the nickname is peculiar!) but just the senior lady on this forum, surrounded by a bunch of great chicks like yourself, and maybe a couple of neat guys! I did ask if I should be another Barb and was voted down! And I started South Beach 2 days ago and have lost 3 pounds! I hope it works for me again, as it did originally until I just allowed some surgical setbacks throw me off! I'll add yesterday's SBD Moussaka a bit later; it was a delicious recipe! Right now, I'll post one for a phase 1 dessert that sound yummy!

    South Beach Diet Dessert Coconut-Almond Macaroons (Phase 1)

    Description
    Almonds add vitamin E, riboflavin, and magnesium to these delicious flourless cookies. For additional filling protein, enjoy the macaroons with a glass of fat-free or 1% milk. On Phase 2, drizzle them with a little melted dark chocolate!

    Makes 8 servings (3 macaroons each)

    Hands-on time: 10 minutes
    Total time: 30 minutes

    Ingredients
    3 ounces slivered almonds (generous 2/3 cup)
    1 1/4 cups shredded unsweetened coconut
    1/2 cup granular sugar substitute
    Generous pinch salt
    1/4 cup nonfat (0%) plain Greek yogurt
    1 large egg white
    1 teaspoon vanilla extract

    Instructions
    Heat the oven to 325°F. Line a baking sheet with parchment paper or a nonstick liner.

    In a mini food processor, pulse the almonds just until ground. Transfer to a medium bowl and add the coconut, sugar substitute, and salt, stirring to combine. Stir in the yogurt, egg white, and vanilla.

    Pinch off pieces of dough the size of small walnuts and form into rough balls. Place the balls 2" apart on the baking sheet. Bake for 20 minutes, or until golden brown and set. Let cool on the baking sheet.

    Per macaroon:
    50 calories
    4 g fat (2 g sat)
    1 g protein
    2 g carbohydrate
    1 g fiber
    17 mg sodium

    Doesn't that sound good? I always thought coconut was a no-no!

    BARBIE, the sodium problem makes it so hard for me to go out to eat! Maybe going back to South Beach will help somewhat. but I did read the Darden Restaurant group will be cutting sodium around 2014! Wht so long? That's Olive Garden, Red Lobster and several other chains.

    Devastating about your sister; so sorry, and hope she will listen to your advice and go get a battery of tests at a good Clinic! 72 seems so young to lose her health this way! My DS went to Dana Farber in Boston 12 years ago and they saved her life! Stage 4 OV CA and they performed a miracle! No signs of any return for 12 years now, but it did leave her with a number of other problems. You'd never know it to look at her, as she is gorgeous!

    I'll post the Moussaka in a separate post.

    Hello everyone!!

    So good to read everybody's post.

    After Cleaning this morning, got going making my pesto, two different recipes, one green pesto and the other sun dried tomato
    pesto; they're both delicious, I had enough for 8 recipes, so the plants were so big and so much was left, I called two of my friends and give them enough for them to make some. I only have 3 plants but this year has been great for basil.

    My Mom is at rehab, so she can get going walking and being a little more active, keep your fingers cross so she can go home this time.:love::love: :love:

    Sandy - so sorry about your sister, my prayers are with you and your family:cry::cry: :cry

    Sandy: I have a cleaning lady too so I will join you in the spoiled department:embarassed: . Started years ago when I was teaching, comes every 2 weeks & cleans, but doesn't pick up after us. Had a hard time convincing my son there IS a difference. With my back issues we've kept her even after I retired.

    Phoebe: I totally understand the struggle with the binges & eat what you want regrets. I keep thinking I'm almost 60 I should have conquered this by now, but it is a struggle.

    My DIL's mom is back in the hospital again, with excruciating pain in back & radiating down. Medication isn't touching it. Doctor discovered a mass during her yearly exam & she had surgery about 3 weeks ago & diagnosed with ovarian cancer, but lymph nodes were clear. She's been in and out of the hospital since. Baptism is this weekend I'm hoping she can make it. Made a big trip to Trader Joe's this morning for the ingredients for 4 salads for the lunch after baptism & told my DIL I would make the shredded beef for her too, so she dropped off roasts this morning. Poor thing, I don't know how she does it; new baby, 2 year old, & 30 year old (my son, alas I love him, but I do wish he would grow up:frown: ..she's a saint) & they just moved yet again.

    I put the 101 year old christening gown in a weak solution of Oxyclean yesterday and this morning rinsed it, again & again, and then rinsed it some more. It's an under slip and dress over the top. I have it laying out on towels to dry and then the scariest part will be ironing & starching it. I was a nervous wreck 2 years ago when I did it for my grandson. My grandma made it for her first child and her 6 children were baptized in it, my siblings & I, my son, his son, & now his daughter.

    I HAVE to get to those napkins! The wedding is 2 weeks from Friday and I leave next week on Wednesday for a 5 day quilting retreat with my friend and I want to sew on something other than placemats & napkins!

    VEGETABLE MOUSSAKA (South Beach-phase 1) makes 4 servings
    from South Beach Diet SUPERCHARGED

    LENTILS provide protein, fiber and rich meaty taste!

    1 large eggplant, cut in 1/4" rounds 1 tsp dried oregano
    2 tsp extra virgin olive oil 1/4 tsp cinnamon (I used 1/2 tsp)
    1 large onion, chopped 1/4 tsp salt (didn't use it; used lemon juice instead)
    4 garlic cloves, minced freshly ground black pepper
    1 15 oz can lentils, drained (I use Westbrae) 1/2 cup fat-free half-and-half
    1 can diced tomatoes w/juices (I use no salt added) 2 large eggs
    1/4 cup chopped parsley 1/4 cup grated Parmesan cheese
    1/8 tsp ground nutmeg
    HEAT oven to 425F
    Lightly coat eggplant slices with cooking spray (I used Olive Oil), arrange on a baking sheet and bake until softened and golden, about 20-25 minutes ...Remove and reduce heat to 350 F.
    MEANWHILE, in large saucepan heat oil over medium heat, add onion and garlic and cook, stirring occasionally until onions are translucent, about 5 minutes. ADD lentils. tomatoes, parsley. oregano, cinnamon, (salt) and pinch of pepper. Bring to a boil and simmer until thickened, about 20 minutes.
    WHILE all are cooking, using a medium bowl
    whisk together half-and-half, eggs, 2 TBSP of the cheese, and nutmeg.
    LIGHTLY COAT 8x8" baking dish with cooking spray, ARRANGE 1/3 eggplant slices in single layer at bottom. Spread 1/2 the lentil mixture over the top. Add another 1/3 eggplant slices over this and then the rest of the lentil mixture . Add the rest of the eggplant over the top.
    POUR half-and-half mixture over vegetables, SPRINKLE with remaining Parmesan. Cover with aluminum foil
    BAKE, covered, 20 minutes; remove foil and bake 10-15 minutes longer until heated through and golden on top.
    LET STAND another 15 minutes before cutting; serve warm

    Nutritional values: per serving (4)
    Calories 230
    Fat 7 gr
    Sat fat 2 gr
    carbs 30 gr
    fiber 12 gr
    Sodium 296 gr (mine was much lower using no salt added or reduuced ssodium)
    Protein 14 gr

    NOTE: I added 1/2 pound of 97/3 ground round (or use lamb, ground) along with the onions and garlic, for appeasing my husband, and it was delicious! Just add the nutritional values divided by 4!

    Can be made ahead and frozen; just double or triple the recipe. Cut Moussaka into portions before freezing up to 3 months.
    When ready to eat, thaw at room temperature, reheat in microwave or toaster oven.

    MARIE: I posted the Moussaka recipe (delicious!) and will explain how to BUY eggplant! Look for deep purple shiny color with few dents. At the end opposite the stem you will see an indentation. Find the ones with only slight indentation. If they are deeper, keep looking, as the deep "belly-button" denotes a female eggplant with more seeds and slightly bitter taste, needing a salt-soak, which we don't need! Last night, mine was plump and about 1 1/4- 1 1/2 pounds and was delicious. Just slice as the recipe says. Eggplant soaks up as much oils as you give it, so just lightly spray with an olive oil cooking spray. Of course I love eggplant parmesan, and if I find a recipe acceptable for us, I'll post it! I'm recommending a recipe file here for South Beach Diet, and you could probably eat anything on it! I just posted the 2 recipes I added here to both our recipe forum and also the South Beach Diet recipe requests! Now I'll have to start searching, too! The Moussaka was excellent, and more...Mike loved it!

    Evening Ladies:

    Dave is out of town for work and his boss took him and seven others to Georgian Bay to
    do Muskee fishing. Dave says they won't catch anything, you need at least 40 hours on a lake
    to catch a Muskee. :ohwell:

    Its pouring rain tonight and very humid. The temps are going to drop on Friday to the high 60's.

    Did housework today for 3 hours and got some nice calorie burn. I miss my cleaning lady :cry:
    She is up and at em' after her knee replacement. I ran into her daughter at Walmart today and she
    says she has walked up 7 steps today already. She will be coming home on Wednesday.
    She will be wearing a brace for two weeks because they had to do some tissue repair.

    I will have to try it. I love lentils. I thought I would try Phase 2 and go from there. My book is older than
    yours I don't have that receipe so I will have to copy it. Thanks for sharing.

    Hi to you all. I also am feeling a bit green with the talk of cleaning gals as I call them. Likely the stupidest thing I did was letting my cleaning gal go when I retired. I really miss her but know that there is no reason I can't do it myself. Dave does all the vacuuming but the rest belongs to me. If I didn't spend so much time on the computer, watching TV or generally being lazy it wouldn't end up being such a big job. Although I love my house I do ask myself many times why we built such a big house! Now that the boys are gone it seems even sillier.

    I think my eyes feel a little better today. This is my last day of the steroid drops so I will see what happens when they are gone.

    I better get making some dinner. Glad to hear from you, Marie. Prayers for your sister, Sandy.
