Spent some time batch cooking with a girlfriend at my place. As a working single mom she struggles to get dinner on the table on weeknights. We made a quadruple batch of coq au vin blanc for her to take home in tupperware to freeze. We ate some tonight with mash. Dessert of dark chocolate sorbet I made a couple of weeks ago and left in the freezer, with a supermarket cookie my girlfriend brought over.

Light dinner of toasted gluten free baguette, smoked trout, smoked cheddar, hard boiled eggs, capers, cherry tomatoes and Primal Kitchen chili lime mayo for the bread. I had a similar dish in a restaurant last week but they used four slices of beefsteak tomato with one thing (chopped egg yolk, minced red onions, chopped egg white, capers) on each tomato slice.

Morning leftovers skillet with fresh juice/shake on side.

We went out to a Singapore/Malaysian place. We ordered kroepoek to have while we waiting for our mains. Main order was beef rendang, stir fried choi sum, Singapore chilli crab which came with fried roti, and a side of rice.

Pasta with marinara sauce and meatballs. Gluten free garlic/cheese bread.

Asian cucumber salad, vegan ma po tofu pulled from the freezer, chicken and snow pea stir fry with rice.

Green apple and mojama salad as a starter followed by pan fried sea bass, sauteed spinach and broad beans in bisque.

Black bean chili con carne with smoked cheddar and sour cream. I make my chili pretty much the same way every time: 1lb black beans, ~20oz Kirkland organic ground beef, 6oz can Kirkland tomato paste and 1/2 cup chopped onion. Only thing that changes is the spice mix. I always use a lot of coriander and cumin plus salt, pepper and some assortment of chili powder. Today I was trying to get a smokier version so also added chipotle chili powder, ancho chili powder and smoked paprika. It worked.

Starter of salad with mandarins, halved grapes, cabrales (a Spanish blue goat cheese), croutons and honey mustard vinaigrette. Small Germanic main of meatballs the hubby made, pickled veg (sauerkraut, gherkins and beets) and smashed new potatoes.

Seared sea scallops, steamed brown rice w/ponzu and rice seasoning, carrots/onion sauté with sliced almonds and miso sauce, Korean crispy seaweed rolls (from the frozen section of an Asian supermarket).

Air fryer Baked Sweet Potato, Black Bean & Lentil Chilli with salad.
I won’t use the air fryer to bake a Sweet Potato again, I don’t think the result is as good as the oven method.

Thanksgiving dinner: Cornish came hen, mashed potatoes, gravy, cranberry sauce and sautéed green beans with almonds. Desert was pumpkin pie gelato affogato using a coffee flavored cordial. For the poultry I used rosemary, sage, thyme and garlic on top because it wasn't thawed enough to stuff inside.

Tried to recreate dishes we ate on vacations in Valencia and Bologna. From Valencia, the salad with beetroot, fruit and smoked sardines. From Bologna, Tigelle with light cream cheese, Cecina de Leon, Jamon Iberico, Goat Gouda and pickles. In Bologna we actually ate Crescentina (deep fried bread) instead of Tigelle (cooked on a dry cast iron griddle) with our charcuterie.

Friday: old fashioned oatmeal with blackberries for brunch (not shown), Thanksgiving leftovers for dinner: turkey slider on a ciabatta roll with sides of steamed broccoli and sweet potatoes. Lemon icebox cheesecake for dessert

Tostados/Tacos - I don’t understand the difference between the two if I’m honest!
No oil vinegar coleslaw, with a no oil stir fried spicy onion, red & green pepper, baby sweetcorn topping, skyr, salsa and a sprinkle of Mexican style Cheddar, and a spritz of fresh lime juice, all on red corn tortillas. I could eat this every day!

Saturday brunch: small bowl of old fashioned oatmeal with blackberries and a drizzle of pure maple syrup along with a large slice of sourdough miche toast with strawberry preserves and coffee

Teriyaki sesame noodles with cucumber, scallion, bok choy, and chicken. Also a lil scorpion tabasco for some kick 🔥
