Friday lunch: Chicken vegetable soup (carrots, celery, zucchini, tomatoes, kale)

Tried out a shaking beef recipe in my new wok! It’s not a great wok but it did work better than I expected!6 -
Homemade Chinese pork potsticker dumplings looked ugly but did taste good. I used the filling and dipping sauce from the Woks of Life pork and chive dumpling recipe but the dough from Woks of Life Har Gow recipe. Main of some stir fried rice noodles mixed with Chinese takeaway leftovers.

New Years Day meal of air fried drumsticks, leftover mashed potatoes and black eyed peas (with pork belly) for good luck in 2023. For many years I always made black eyed peas on the first of January but in recent years I have done it less often but I thought we could use a bit of luck.

For dishes where wok hei is important (the smokiness from flare ups) which I don't manage to get on a domestic burner, I supplement with a blow torch to create some of that smokiness that comes with extreme high heat only possible in a restaurant kitchen.

Monday night dinner:
Potato flake crusted cod and baby peas

Lunch at work: chicken pot pie.1 -
Lamb leg steaks, sauteed spinach, roast potatoes.

Tuesday brunch:
Chaffles (1 egg. 1/2 c mozzarella cheese, 1 t coconut flour, cinnamon)

Pasta with squid tentacles and Chilean sea bass in a marinara sauce. This ended up being much better than I expected. It wasn't the original plan which involved fresh garlic, tomatoes & olive oil but we weren't able to get to the store so I had to make due with what was in the pantry.

Ethiopian Yellow Split Pea Curry (Kik Alicha) with Spring Onion Rice and Runner Beans. Really enjoyed this as it was the first ‘intentional’ meal after too many days ‘making do’ to use up what was left in the fridges after Christmas guests etc.

Soya Mince & Butternut Squash Chilli, with Pearled Spelt and salad leaves. Topped with Skyr, fresh tomato & Spring Onion and a little Mexican Chilli Cheddar. Made a massive batch of the Chilli to go in the freezer for quick no effort meals for weeks to come. 😊

Air fryer buffalo wings, lentils cooked in the broth I last made corned beef in, carrot sticks and ranch. Sauce of zhoug mixed with yoghurt for the lentils.

Seaweed snacks and miso soup with buckwheat noodles (hidden in the broth), pork belly, shiitake mushrooms and seaweed.

Low carb tortilla "pizza"
Salad with salmon, goat cheese, beets, butternut squash, jalapeno, red onion and pecans. No dressing other than lemon juice.

Hubby took me out to dinner as thanks for doing his income tax over the holidays. The veg dishes at this BBQ restaurant were astonishingly good. Besides the wings and dry aged beef flatbread we had the coal roasted aubergine, charred kale and salt baked beetroot.

Lunch after my first PT session of 2023. I usually just do a protein shake bc exercise suppresses my appetite and sometimes makes me nauseous., so I usually plan a bigger meal for later in the day. But today I’m actually hungry.2 -
Working outside splitting and stacking wood today. Coffee for breakfast to get a jump on things... just came in for lunch: leftover chicken and steamed broccoli added to 3/4 cup veggie Alfredo pasta with a little Everything but the Bagel seasoning. Oh and hot chocolate (it's cold out today)

Weekend breakfast for a cold morning: oatmeal, sweet potato, raisins, ground toasted almonds with a little maple syrup and cinnamon.

There is yogurt under there somewhere… berry and Pom jubilee.

A girlfriend came over for dinner and we did Chinese. Goose breast served like Peking duck with pancakes followed by Cantonese aubergine stuffed with fish/prawn mince drizzled with black bean sauce with rice.
