I got a crockpot for my birthday. And now I am on the hunt for fun recipes. I am willing to try anything...sweet, savory, hot...Bring me your best ones!!!

I do a lot of chicken in mine. You can put frozen chicken breasts in it, add a jar (or homemade if you prefer) pasta sauce, a bunch of chopped up veggies...it's so good over brown rice or whole wheat pasta. Or put the chicken in, add chicken broth and seasonsings of choice...you end up with really moist, juice chicken. I'm trying a chicken taco filling tomorrow in mine. Put frozen chicken breasts in, add a jar of salsa and seasonings of choice. Once it's done, you can shred it with 2 forks. Yum All of these work well 8 hrs on low, or 2 hrs on high, and 4 or 5 on low. Enjoy!52

I made this the other day. It was good. I would skip brown sugar in the crockpot next time (it didn't need any extra sweetness). But the brown sugar in the brine is just fine.

slow cooker apples!
5 large apples, whichever kind you prefer. I usually buy gala or some other red kind. make sure it is nice and firm
brown sugar
raisins
butter
cinnamon
walnuts or pecans
apple/or orange juice
peel apple, but leave half inch strip around entire apple (helps apple from splitting while cooking). core it and scoop out some flesh. mix together melted butter, cinnamon, brown sugar, and raisins. sometime I add dried pineapple and coconut flakes. spoon it into the cored apple.
pour an eighth inch amount of apple juice into bottom of crockpot (helps prevent burning) and place stuffed apples in it. cook on high for about 3 hours...occasionally spoon the liquid/nuts that fall out of apples back in and bathe the apples while they cook. I love making this during the fall especially! enjoy!27 -

Irish Lamb Stew
Ingredients
2 pounds boneless leg of lamb, trimmed and cut into 1-inch pieces
1 3/4 pounds white potatoes, peeled and cut into 1-inch pieces
3 large leeks, white part only, halved, washed (see Tip) and thinly sliced
3 large carrots, peeled and cut into 1-inch pieces
3 stalks celery, thinly sliced
1 14-ounce can reduced-sodium chicken broth
2 teaspoons chopped fresh thyme
1 teaspoon salt
1 teaspoon freshly ground pepper
1/4 cup packed fresh parsley leaves, chopped
Preparation
Combine lamb, potatoes, leeks, carrots, celery, broth, thyme, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the lamb is fork-tender, about 8 hours. Stir in parsley before serving.
(It's Delicious!! And the meat turns out SO tender!)
Balsamic Chicken
Ingredients:
4-6 boneless, skinless, chicken breasts
2 14.5 oz can diced tomatoes
1 onion thinly sliced (Not chopped)
4 garlic cloves
1/2 cup balsamic vinegar
2 tblsp olive oil
1 tsp each: dried oregano,basil, and rosemary
1/2 tsp thyme
ground black pepper and salt to taste
Preparation:
Pour the olive oil on bottom of crock pot
place in chicken breasts, salt and pepper each breast
put sliced onion on top of chicken
then put in all the dried herbs and garlic cloves
pour in vinegar and top with tomatoes
Cook on high 4 hours, serve over angel hair pasta.
(this can also be slow-cooked over 8 hours. I added a bit more balsamic than called for, plus some fresh spinach under the onions and tomatoes, and it was wonderful!)

crock pot apple dessert.......
6 apples peeled and sliced
2/3 cup oatmeal uncooked
2/3 cup sugar
1/3 cup flour
1 tsp cinnaon
1/4 tsp nutmeg
1/4 tsp ginger
1/3 cup butter
mix oatmeal, surgar,flour,and spices in small bowl. stir melted butter in to mixture until it is crumbly.
spray crockpot with nonstick cooking spray. put about half of sliced apples in bottom of crockpot and spoon half the oatmeal mixture on top. cover with rest of apples and top with left over crumbly mixture. cook on hi about 2.5 hours serve warm.......

I like to make a spicy pepper chicken (a healthier pepper steak). 2 pounds of chicken which is sear on the stove with some non-stick cooking spray, I put that in the crock pot with chopped green pepper (2 medium), onion (1 medium), hot pepper (one with the seeds still in it, and a tomato (1 or a can of diced tomato, but I like to keep mine fresh). Then I take a quarter cup of hot water and mix it with one chicken bullion cube and a teaspoon of cornstarch (if the tomato is really juicy you may need to add some more later on, just make sure to mix it with cold water before adding it to the hot mix). Then I add 3 tablespoons of soy sauce and 1 teaspoon of sugar. Then add some seasonings that you like, I used garlic powder, some minced onion, chilli powder, red hot pepper flakes, and some cumin. Add the rest to the crock pot and cook on high for around four hours. You can serve it over rice or eat it as is. When I put the recipe into the calorie counter on here and divided it into 6 portions (and they are really decent portions) it comes out at 878 calories for the whole pot and 146 calories for each portion.44

There is! A friend has one and I was always hoping to find one here in Germany. And then it hit me: "amazon must have them". And they did. And now I can be a happy cooker. :P And that's a lot of "and"s.9

I've just got a crock pot and interested in veggie recipes or healthy deserts like a healthy rice pudding?
What about doing rice or risotto? Any suggestions?6 -
One whole onion, sliced into rings
One whole chicken, cut up
One to two bulbs garlic, separate cloves (you will have between 20-30 cloves)
Salt and pepper
Paprika
1 TB Olive oil
Layer onion on bottom of crock pot. Rub chicken pieces lightly with olive oil then sprinkle with salt, pepper and paprika. Put cloves of garlic on top (leave some with their skins, some without).
Cook on low for 8+ hours or high 5-6. You will get fall off the bone chicken with a slight sweet taste from the roasted garlic. I serve this the first night with veggies or potatoes. Then take the leftover chicken, skin it and shred it. Now you have chicken for chicken salads, taco salads, enchiladas, tacos, soups, etc. And it's cheap!26 -

I am going to try some of these recipies but I have a favorite of making chili or chicken noodle soup in the crockpot while at work instead of on the stove after work. This way it is ready to eat as soon as I walk in the door!!
*any chili or chicken noodle soup recipe is good. Just know that the chicken noodle soup has extra time because the noodles will need to be added when you get home so they don't go soggy.3 -

Servings: 6 • Serving Size: 1 1/2 cups • Old Points: 4 • Points+: 5
Calories: 215.7 • Fat: 0.7 g • Protein: 8.7 g • Carb: 42.0 g • Fiber: 6.7 g
1/2 onion, chopped
1 cup carrots, chopped
1 celery stalk, chopped
2 garlic cloves, minced
1 (28 oz) can diced tomatoes
1 (15 oz) can white beans, drained, rinsed (cannellini or navy)
3 cups fat free chicken broth (or vegetable broth for vegetarians)
1 oz chunk of good Parmesan cheese rind
1 fresh rosemary sprig
2 bay leaves
2 tbsp chopped fresh basil
1/4 cup chopped fresh Italian parsley leaves
salt and fresh pepper
1 medium zucchini, chopped
2 cups chopped fresh or frozen (defrosted) spinach
2 cups cooked small pasta like ditalini or elbows (al dente)
extra parmesan cheese to top (extra pts)
Rinse and drain beans. Puree beans with 1 cup of the broth in a blender.
In a crock pot, combine broth, tomatoes, pureed beans, carrots, celery, onion, garlic, herbs, Parmesan cheese rind, salt and pepper. Cover and cook on low for 6 to 8 hours.
Forty minutes before the soup is done cooking, add zucchini and spinach. Cover and cook 30 more minutes. Add cooked pasta, cook 10 minutes more. Remove bay leaves, rosemary sprig, parmesan rind and season to taste with salt and black pepper. Ladle soup into bowls and top with extra parmesan cheese.

I LOVE the crockpot cheeseburger with the 100 calorie sandwhich thins. Since McDonald's was the main staple of my diet before I found the motivation to go with all of my desire, there could not be a more perfect food for me!3

You can cook a whole chicken too. Just remove neck etc, wash and toss in the pot with whatever spices you desire. You get tender and jucy meat that is cheep and can be eaten and or added to other recipes.2
