I have used zucchini in place of the pizza crust before, and it's crazy delicious! Just cut the zucchini in half length-wise, scoop out a little bit of the fleshy part, and then add your sauce, cheese, and other toppings. Then you can either bake it or grill it.0

Making this tonight!!
But does anyone know how large it is when you make as directed (using the 1cup cauliflower)? There is only 2 of us (adults) eating it, so wondering if one will be enough or should I make 2?
Thanks for posting the recipe!0 -
I just made this and it was unexpectedly unbelievably good! I was really circumspect, especially when I saw how the riced cauliflower, mozzarella and egg mixed, before the oven. But the result was great! I topped it with tomato sauce, mushrooms, jamon cocido (or whatever meat), some mozzarella and to the oven for a few more minutes!
I am so excited because I love pizza and it was difficult giving it up (too many calories for too little) or binged on it, but with this, I think I have it under control now. Thanks for posting the recipe!0 -
