A bed of cut up sweet potatoes, topped with chicken thighs and everything doused with a sauce made from orange juice concentrate, coconut milk, orange marmalade, peanut butter, ginger, curry, and cayenne pepper.
  • I made ribs in mine last weekend... spice rubbed the day before, brushed with some sauce, carrots, celery and more sauce diluted with water in the bottom of the pot to prevent sticking/uneven cooking. I cooked them on high for 4 hours, then gave them 20 in the oven to form a nice glazey crust. It was an indulgence, but the sides (steamed green beans, roasted potatoes tossed with a little olive oil and spices) were healthier than if we'd gone out for ribs at a restaurant. Plus it was cheaper! The carrots and celery from the crockpot were pretty tasty, too.

Moroccan Lamb Stew, delicious, roughly 550cals per portion
    (serves 4)

    1kg diced lamb
2 sachets of moroccan sauce (comes with the lamb in asda UK)
    1 large onion.
mixed chopped peppers - as many as you like.
sliced mushrooms - as many as you like.
    brown rice 150g per person

But in the slow cooker, leave for hours.
1 hour before eating put the rice in the pot & mix.

    eat when ready.

    Delicious.

    Chicken Burritos

    1 clove garlic, minced
    1 small red onion, chopped
14.5 oz can diced tomatoes, with chiles
15 oz canned kidney beans, drained & rinsed
    1/2 tsp chili powder
    1/2 tsp table salt
    1/4 tsp dried oregano, crushed
    1/4 tsp black pepper
1 pound skinless chicken breasts, cut into bite sized pieces
    3/4 cup chicken broth

Cook on low setting for 5 hours, drain liquid off & should be about 6 cups of mix. Place 1/2 cup burrito mix on a whole wheat tortilla, add some cheese & you're all set.

Oh my this sound so delish could you post the recipe for the sauce!?
  • 4 boneless/skinless chicken thighs cut up into small pieces
1 can of cream of mushroom soup
    2 cans of chicken broth
    2 cups of frozen corn
2 cups of frozen string beans
1 bag of frozen stew vegetables (potatoes/carrots/celery)
I put in about a palm size serving of frozen chopped onions
I let the chicken brown a little first before pouring in the liquid
I let that cook (sorry dont remember how long) until the chicken is done
Then put in all the vegetables and let cook on 2 over night
    If you use this enjoy!

i ate about 1/3 cup serving
