    Curry goat should be waiting for me when I get home, with carrots and sweet potato. Make something easy (Quinoa, couscous, buckwheat) and I should be good to go.

    I use mine Monday - Friday now that we are in "Swim Season". Tonight it is Boneless ribs in Terriyaki sauce.

    Boneless skinless chicken breast and prego sauce! Amazing when served over long grain rice. Found that recipe off this site a few weeks ago. I love my crock pot!

    I'm brewing up my Crockpot Chai Tea tonight.

    8 black tea bags, paper tags removed
    8 cups water
    Fresh ginger, approximately 1.5 inch piece, peeled and cut into 8 pieces
    5 cinnamon sticks
    16 whole cloves
    1 teaspoon vanilla extract
    1/2 cup sugar (I eliminate this and sweeten with Stevia when I drink it)

    Put all ingredients in slow cooker, and brew on high for 2 hours. Strain mixture and discard solids. Add milk just before serving in equal portions (a.k.a. 1 cup milk to 1 cup chai tea). Can be served hot or cold. Refrigerate for up to 1 week.

    small package baby carrots
    1 can beef broth
    1 package of onion soup mix


    I love the veggies best; that is why there are so many. I could actually do without the meat but the hubby and kids wouldn't go for that.

    Cannot wait to dig in to it tonight. I may cook some asparagus to go with it.

    A good soup full of veggies, I figured a pint per serving & its low fat and has good protein.


    Makes: 10 - 16 oz servings (2 cups) in a 5 qt (160 oz.) slow-cooker (crock-pot)

    INGREDIENTS

    2 medium onions, sliced
    2 garlic cloves, minced
    2 Tbsp. olive oil
    8 cups chicken broth or vegetable broth (reduced sodium)
    1 small head cabbage, chopped
    2 large red potatoes, chopped
    2 cups chopped celery
    2 cups chopped carrots
    4 cups corn
    2 Tbsp. dried basil
    1 tsp. dried marjoram
    1/4 tsp. dried oregano
