Omg, last night I made the worst crockpot meal in my life. It was a recipe from Family Circle magazine. It was chicken, broccoli, and cheese casserole. Everything about it was wrong. It called for a diced onion which overpowered the whole dish. The cheese broke down and the whole thing just tasted nasty. I wouldn't even feed it to my family. The kids ate chicken nuggets and we ate leftovers. I've never made something this awful before. I hate that I wasted food. I put it in my fridge hoping I can rescue it somehow but I just don't see how. But stay away from that recipe!0

Yesterday mine had steel cut oats in it. I think I found the recipe on MFP --- just take 1 C steel cut oats, add 4 C water. I use my 4C measuring (glass) cup and put it into the crock pot and pour water around it about half way up. Water bath.
Let it cook on low 4-6 hrs until thick and creamy. Sometimes I add raisins. I add cinnnamon too.
The kids love it and I like that it's quick and easy to have on hand so we can eat if for dinner or save and reheat for breakfast.0 -

Beef & Beer caserole, later ill put it in a caserole dish, plop my dumplings on top and pop in the oven! Hmmmmm Dumplings!!!
please share! i have never even thought to 'start' dinner in the crock and then finish in the oven! genius!! (especially the dumpling part!!)
I always end up doing my dumplings on top of what I'm cooking in the crock pot about 15-20 toward the end of cooking. I'm too lazy to do more dishes than I have to. ;]0 -

            Tumbleweeds...
Well, I made a pulled pork recipe a few weeks ago that's super-easy and pretty darned good if you're not fanatic about BBQ. Key ingredients in the sauce: root beer and chili sauce. No kiddin'. It's yummy!0 -

            chicken coconut curry
ingredients
3 tablespoons all-purpose flour
3 tablespoons curry powder
1-1/2 teaspoons ground cumin
1 teaspoon salt
1-1/2 pounds boneless, skinless chicken breast halves or thighs, cut into 1-inch pieces
2 cups peeled and chopped potatoes
1-1/2 cups bias-sliced carrots
1 cup coarsely chopped cooking apple
3/4 cup chopped onion
2 cloves garlic, minced
1 jalapeno pepper, seeded and finely chopped
1 teaspoon instant chicken bouillon granules
1/2 cup water
1 13-1/2-ounce can unsweetened coconut milk
Hot cooked rice
Raisins
Chopped peanuts
directions
In a large plastic bag combine flour, curry powder, cumin, and salt. Add chicken, a few pieces at a time; seal and shake to coat.
In a 3-1/2- or 4-quart slow cooker combine potatoes, carrots, apple, onion, garlic, jalapeño peppers, and chicken bouillon. Top with chicken. Pour water over chicken mixture.
Cover; cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
If using low-heat setting, turn the slow cooker to high-heat setting. Stir coconut milk into chicken mixture. Cover; cook for 30 minutes more. Serve over hot cooked rice. Sprinkle each serving with raisins and peanuts. Makes 8 servings.0 -
