    Does anybody have a low calorie recipe for like a chicken rice cheese casserole like the one using campbell's soup?
    I bet if you subbed cauliflower rice for the normal rice, you would reduce the calorie count quite a bit.


    Cauliflower rice? I didn't know there was such a thing. Does it taste like rice?

    Always use brown rice whenever you need to eat rice!

    2 cups cooked chopped chicken (fat trimmed)
    1 cup long grain white rice
    1 can low sodium cream of chicken
    16 oz frozen broccoli
    1 cup fat free shredded cheddar cheese
    1/4 cup fat free milk
    3 cups water

    combine all ingredients into crock pot. cook on high 3-4 hrs.

    serving size 1- 1 1/2 cups cooked.

  • 5 trimmed chicken breast
    lay in the bottom of crock pot
    1 pack of dry italian seasoning dressing - (I use 2 because I like the stronger season taste)
    chicken stock - pour over the chicken/seasoning, just barely covering it
    Cook on low for 5 hours
    then shread the chicken in the crockpot
    1 can of low sodium cream of chicken soup and 1 block of fat free cream cheese
    blend the soup and cream cheese with a mixer (get all the clumps out)
    Mix the cream cheese/soup blend into the crock pot, stir well
    Cook for another hour
    Serve over rice or whole wheat pasta

    YUMMY !!!

    Any idea on Calorie count? Sounds yummy and different.

    This is what I made tonight... I made a huge amount because my husband has a hallow leg and needs to eat a lot. I plan on eating it throughout the week.

    TEX MEX RICE

    In the crockpot:
    3 cups dry brown rice
    6 cups water
    430 g ground pork (browned in pan)
    1 tsb canola oil
    1 can diced tomatoes
    taco seasoning (I use my own homemade blend)

    cook on high for 3 hours, add 2 cups frozen peas
    cook for another 30 minutes until rice is tender

    This made 20- 1/2 cup servings @ 171 calories each :)

    Sounds yummy....One question...why do you need cooked chicken when it will be cooked anyway?....
  • I just made a recipe tonight that was on the back of a box of uncle bens brown rice. OMG it is so awsome!!!!!!!!!!!! If anyone wants it just let me know or buy a box of Uncle Bens brown rice . TRUST ME YOU WIL LOVE IT.................
