A very sexy salad (as Jamie Oliver might say).
I know, on this thread we celebrate real food, rather than "diet food" and salad is the quintessential "diet food". However, I believe this to be an exception. You decide!
This salad is a bed of mixed greens and romaine ('cause I happened to have both).
Topped with
- English cucumber
- Asian pear
- pomegranate
- gorgonzola cheese
- home-candied pecans
- warmed lemon-pepper chicken
- drizzled with a homemade orange-poppyseed dressing
Please imagine a dusting of chopped scallions on top. I forgot them for then photo, tossed my salad and added them later. I was hungry!0 -

A tossed-together dish of crimini mushrooms and scallions sauteed in a dab of butter with garlic. Added shrimp to the skillet and put the lid on to steam. Finished with a squeeze of lemon and served over (leftover/reheated) brown rice. Fridge to plate = 10 minutes! Woohoo!

Tonight I made lighter crab cakes from Cook's Illustrated. I did NOT use fake crab, nor did I use canned crab. I bought some giant frozen legs and steamed and shelled them with my own two hands. Yep, I get to keep my foodie card another day!
They really are lighter - at 225 calories and 10g of fat, it's not bad at all... but if you're sodium-sensitive, beware! I had no idea crab was so high in sodium on its own! Since I'm weighing in for a challenge tomorrow, I need to curb my sodium a bit today... so only one crabcake for me. Waaah!
They're yummy, and almost entirely crab. Plus, they can be made up to 24 hours ahead and kept in the fridge, then fried up at the last minute. I served them on a bed of kale done in toasted garlic.
