I also cook it in replacement of rice or couscous to get a very filling side for chicken or fish dishes.

I bough some black quinoa at the bulk store the other day and I mixed it with the white quinoa. The final dish had a special look to it :)

I like to mix it with home made basil or cilantro pesto. Black beans work good. I make chili with it also. As a side dish by itself I cook it in broth.

Pretty much anything that I would usually use rice for, I use quinoa instead. I actually prefer it, it doesn't go mushy and reheats well.

When we run out of brown rice tortillas I spread some cooked salted quinoa on a plate and then I put cheese all over it and melt it in the microwave and eat it with tomatillo salsa! Delicious!

It is also good with butter or olive oil and salt, like rice.

Chili or stew on the top.

    Greek salad on the top.

oooh my favourite is to stir into hot quinoa: chopped garlic, a little sweet onion some chopped fresh mint and parsley, a little olive oil, lemon juice, salt and pepper and crumbled feta!!! The feta gets all melty!!! very comforting!

I cook the quinoa in chicken broth and let it cool. Then I mix it with cucumbers, cherry tomatoes, chopped red onion and a tablespoon of lite italian salad dressing. Sometimes I add some finely chopped jalapeno pepper for a little kick! A dash of sea salt is also a good alternative. YUMMY!!!!!
