    Wight Watchers Tuscan Sausage and Bean Soup

    12 oz turkey kielbasa, cut into 1/2 inch thick rounds
    2 cloves garlic, minced
    1 onion, chopped
    1 medium carrot, peeled and chopped
    1 celery stalk, chopped
    1 c. green beans
    3 c chicken broth
    1 15.5oz can red kidney beans, rinsed and drained
    1 15.5oz can great Northern beans, rinsed and drained
    1 14.5oz can Italian seasoned diced tomatoes
    1/2 c dry red wine or water
    1 tsp dried basil

    DIRECTIONS
    1. In a slow cooker, place the kielbasa, garlic, onion, carrot, celery, kale, broth, kidney beans, great Northern beans, tomatoes, wine, and basil. Stir to combine. Cover and cook on low until the vegetables and tender, 8-10 hours.

    Nutrition Data Per Serving, 116 g: 143 cal, 23 g carb, 3 g fat, 191 mg sodium, 5 g fiber, 8 g protein, low Saturated Fat & Cholesterol, good source Vit B6, Folate, Iron, Phosphorus and Copper, Vit A, Vit C, Vit K and Manganese. Estimated glycemic load: 11

    Ingredients:

    1/2 cup quinoa
    3/4 cup uncooked small red lentils (masoor dhal)
    Optional: 1 Tbsp olive oil
    2 large carrots
    2 stalks celery
    1 small head cauliflower OR 2 medium potatoes or OR 1 med. zucchini OR 1 small butternut squash
    1 bay leaf
    2 inch piece cinnamon stick
    2 thin slices fresh ginger

    1/2 jalapeno pepper, seeded
    6 cups water or unsalted soup stock
    1/2 tsp gr cumin
    1/2 tsp gr fennel seed
    1/2 tsp turmeric
    1/2 tsp paprika
    1/2 tsp gr coriander
    1/2 tsp dried thyme leaf or 1 sprig fresh
    1 tsp dried basil or 1 Tbsp minced fresh
    1/4 tsp dried rosemary leaves or 1 sprig fresh
    1/2 tsp salt or to taste and fresh ground black pepper
    4 Tbsp minced fresh herbs: parsley, cilantro or basil
    2 cups chopped fresh greens: kale, chard, or spinach
    More Heat: Add 1/2 - 1 tsp green curry paste OR 1/4 tsp cayenne powder

    Crockpot Directions:


    Rinse the quinoa and red lentils in a bowl or pan, then drain into a colander
    Peel the carrots, slice lengthwise, then slice in thin pieces
    Wash and trim the celery stalks, then slice crosswise in thin pieces
    Break or cut the cauliflower into large chunks - these will break up into smaller pieces as they cook
    Combine olive oil, quinoa, lentils, herbs & spices, fresh ginger and jalapeno in the crockpot
    Add the vegetables, except for the optional greens, and cover with the 6 cups water
    Cover and cook on low for 6 hours or more if needed
    20 minutes before serving, turn the heat up to high and stir in optional greens
    Just before serving, add the minced fresh parsley, basil or cilantro, salt & pepper, and serve, removing the ginger slices, bay leaves, cinnamon stick, as you come across them

    yummy, never thought to add sweet potatoes to soup.
    Love my crock pot, have gone through 2 of them already! Here's a meat free recipe I've been loving and making a lot, lately, from Fix It and Forget it Lightly:

    Sweet Potato Lentil Stew (serves 6)

    4 c fat free vegetable broth
    3 c (about 1 1/4 lbs) sweet potatoes, peeled and cubed
    1 1/2 c lentils, rinsed
    3 medium carrots, cut into 1/2" pieces
    1 medium onion, chopped
    4 garlic cloves, minced
    1/2 tsp. cumin
    1/4 tsp ground ginger
    1/4 tsp. cayenne pepper
    1/4 cup minced fresh cilantro or parsley
    1/4 tsp salt

    1. combine first nine ingredients in slow cooker.
    2.Cook on low 5-6 hours or just until vegetables are tender.
    3.Stir in cilantro and salt just before serving.

    Variations: For added flavor, you may want to increase cumin to 3/4-1 tsp and ginger to 1/2 tsp. You may also stir in 1/3 c raisins, 1/4 c chopped nuts, and 1/4 c grated coconut just before serving.

    ( I did not do the add on variations, but I DID bump up the seasonings and salt a bit.)

    Super Easy Whole Chicken In The Crock Pot


    Whole Chicken In The Crock Pot

    1 large chicken, we used about a 3.5 pound one but you can use whatever size you like that fits in your crock pot
    2 teaspoons paprika
    1 teaspoon salt
    1 teaspoon onion powder
    1 teaspoon thyme
    ½ teaspoon garlic powder
    ¼ teaspoon cayenne pepper
    ¼ teaspoon black pepper
    1 onion (we used a red onion because it's what we had on hand)

    1.) Loosely chop the onion and layer it on the bottom of the crock pot.
    2.) Combine the spices in a small bowl.
    3.) If need be clean the insides out of the chicken and then rub the spice mixture all over the chicken (and in the inside too if you like).
    4.) Place the chicken on top of the onion in the crock pot and put on the lid. No need to add any kind of liquid.
    5.) Cook for 4-5 hours or until chicken is fully done.
    6.) Serve and enjoy!

    here is a couple with Chicken I like

    2 or 3 chicken breast
    1 can rotel
    2% velvetta
    place in slow cooker and cook it is so good and the cheesy sauce is great with it

    another
    2 or 3 chicken breast
    1 can diet cola (your choice)
    1 cup ketchup
    equally good and also nice sauce
    and you can sub the chicken for ground beef its like sloppy joe then only less cals.

    Corn beef
    Put in a lean corn beef into the crock pot. Cover with beer, I like Killians Red as it give the best flavor to the meat but any beer will do. Two hours before serving put in potatoes or cabbage. The meat will be very tender and so will the potatoes. And to answer the question none of the items will taste like beer. Just very rich and flavorful Cook on low for 8-9 hours or high for 4 hours
