This is a favorite in my house:
Crockpot Chicken Fajitas
6 boneless skinless chicken breasts or 8 boneless skinless chicken thighs.. cut into cubes
3 red peppers and 3 green peppers (good sized ones) chopped into chunks
2 packages of low sodium fajita seasoning
1 medium sized jar of extra chunky salsa (mild, medium or hot... whatever your preference)
2-3 tbsp of flour
Put all of the ingredients in your crockpot in the morning, give it a quick stir, cover and cook on low all day.
Serve with rice, noodles or tortillas.0 -

I use my crock pot at least twice a week..redbeans and sausage,, butterbeans,,, stews,, jambalayas... My favorite is vegetable soup.. Frozen bag of soup vegetables, add extra can if corn , tomatoe sauce,seasoning... Yummy!0

I've made this a couple of times and it is delish! In fact, it's cooking right now for tonight's dinner!
Mexican Crockpot Creamy Chicken
Ingredients:
20 oz. Boneless Skinless Chicken Breasts (this is about 5 breasts, I put mine in frozen)
1/2 cup of salsa
1 bag frozen sweet corn
1 can of black beans, drained and rinsed
1 can of Rotel Diced Tomatoes with Green Chilies
Chili Powder (to taste)
Salt & Pepper (to taste)
1/2 block of cream cheese (I use 1/3 fat free)
Directions:
Put chicken in crock pot and cover with all ingredients except for cream cheese.
Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
Cook for 3-4 hours on high, 7-8 hours on low.
Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
Serve over rice or in tortillas as tacos/burritos.
Top with some shredded lettuce, diced tomatoes, onion.
Makes 14 – ½ cup servings.

I recently tweaked this recipe by using 1 c. of salsa (instead of 1/2 c.), 2 cans of black beans (instead of 1). And I usually add a bit more cream cheese than what the recipe calls for.
The nutrition information is based on the recipe, not my alterations.

Start with any kind of roast , Lipton onion soup mix (one box) , carrot , onion , celery , potato , one cup of water .....3-6 hours later you have a hearty hot , meal .0

Loving all the recipes
I use tinned tomatoes with mixed herbs, chilli powder, garlic and some veg stock add some browned onions plus butternut squash, carrots, red pepper, celery. Brown some low fat sausages and chop them into thick chunks. Add in some potato.
If I've got it in the fridge - in it goes lol

Slow Cooker Pork Chops with Apples and Cranberries
4 center cut pork chops
salt and pepper to taste
2 apples, chopped
1/4 cup dried cranberries (Craisins)
6 tbsp. brown sugar
2 tbsp. apple cider vinegar
1 tsp. ground cinnamon
1 tsp. ground ginger
Spray inside of slow cooker with nonstick spray. Season chops with salt and pepper and place in bottom of slow cooker.
In small bowl combine cranberries, brown sugar, vinegar, ginger, and cinnamon. Pour mixture over chops. Top with chopped apples.
Cook on low 4 to 4 1/2 hours.
I have also done this with boneless pork cutlets stuffed with Stove-Top Stuffing (any flavor you like). Just make the stuffing as package directs and let cool. Take a pork cutlet and top with about 2 tablespoons of stuffing. Roll up cutlet around stuffing and place seam side down in slow cooker. 1 box of stuffing will fill about 8 pork cutlets.0 -

Cheesey Chicken Spagetti
Ingredients
16 oz dry whole wheat spaghetti, cooked & drained
1 lb. velveeta 2% light cheese
12.5 oz can chicken breast, drained
1 can 98% fat free cream of mushroom soup, undiluted
1 can 98% fat free cream of chicken soup, undiluted
10 oz can diced tomatoes and green chilies (Ro-Tel)
1/2 c water
Optional:
4 oz can mushroom stems and pieces, drained
1 small onion, diced
1 medium green pepper, diced
salt & pepper, to taste
Directions
spray slow cooker with non-stick cooking spray
combine all ingredients in slow cooker and stir well
cook on LOW for 2-3 hours. stir again just before serving
Number of Servings: 120 -
