I just found a recipes for shredded chicken wraps.
Put thawed chicken breasts in the crockpot and cover with salsa. It says to add taco seasoning but I tried fajhita seasoning also and it tasted great. Cook on low for 6 hours and you should be able to shred the chicken. Serve on tortillas with whatever you like.0 -
I'm making a Crock pot Buffalo chicken lettuce wrap tonight for dinner,
Ingredients:
For the chicken:
24 oz boneless skinless chicken breast
1 celery stalk
1/2 onion, diced
1 clove garlic
16 oz fat free low sodium chicken broth
1/2 cup hot cayenne pepper sauce (I use my homemade hot sauce but Frank's works good.)
For the wraps:
6 large lettuce leaves, Bibb or Iceberg
1 1/2 cups shredded carrots
2 large celery stalks, cut into 2 inch matchsticks
Directions:
In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). Cover and cook on high 4 hours or low for 6-8 hours.
Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.
To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!

I like to put a whole chicken in the crock pot. I stuff some chunks of onion in the cavity, sprinkle on some herbs and put a little dry sherry the pot, then cook on low while I'm at work. It seems less greasy, and I assume it has quite a bit less sodium than deli rotisserie chicken, but it's similar in taste/texture and almost as easy.0

Balsamic crockpot chicken
4 chicken breasts
3/4 cup olive oil
3/4 cup balsamic vinegar
1/4 cup of maple syrup (for sweetness)
3 cloves of garlic
diced onion and basil

Cilantro lime shredded chicken taco filling - easy, yummy, very low in calories. Do use fresh cilantro. Dried just isn't quite the same. I didn't use 3 pounds of chicken. It turned out fine with less. It would freeze fine, but it didn't last that long at my house.

5-6 frozen chicken breasts, add a can of chopped canned pineapple (you can drain some of the juice) and then cover with bbq sauce. Cook on low 6-8 hours. It will be easy to pull apart. You can eat it like that or add it on a bun.0

P.S. - I made the "Crockpot Buffalo Shredded Chicken" last night which someone mentioned earlier in this thread - the one with a bottle of Frank's hot sauce and a packet of ranch dressing powder. It was great! I highly recommend it.0 -

Lemon and Herb
A couple pounds chicken (I always use thighs because I find breasts dry out really easily in the cp)
1/2c lemon juice
a bunch of minced garlice
a few dashes of... parsley, tarragon, rosemary, sage, salt and pepper
1/2 cup chicken broth
Pour ingrediants over chicken and cook on low for 8h
One Pot Meal - Jerk Chicken and Sweet Potato side(Love this one!!)
2 sweet potatoes cubed
1 can water chestnuts, drained
1c raisins
1 can pineapple tidbits (drained and juice reserved)
chicken
jerk seasoning
1/4c onion flakes
3Tgrated fresh ginger
2T worcestershire sauce
grated lime peel
cumin (I always use a ton because I love cumin)
In cp, mix first 4 ingrediants
sprinkle chicken with jerk seasoning to your tasting, put on top of potato mixture
combine the remaining ingrediants and pour over chicken
cook on low for 7-8h

Here's what I do:
3 chicken breasts
3 c. random vegetables (My family likes potatoes, carrots, broccoli)
1/2 c. mushrooms
2 tbsp onion
2 clove garlic
1 can Healthy Request Cream of Chicken or Mushroom
1 soup can water
1 chicken boullion cube
Pepper, thyme, rosemary to taste
Put it all in the crock, cook it up, serve over brown rice. Serves 3.0 -

A nice easy one, put a whole chicken in on medium power for about 4 hours. Then remove the skin and the bones (they should just fall out), pour off the fat and juices then shred the meat and add a bbq sauce of your choice, pulled chicken.
Served in either buns, wraps, lettuce, with salad or rice.0 -
Boneless, skinless chicken breasts in the crockpot. Add a jar of mushroom spaghetti sauce and cook six hours. You can add fresh mushrooms too. Chicken cacciatore. Serve over whole wheat noodles or rice. This freezes well too.0

Crockpot Cranberry Chicken
Frozen chicken breasts
1 can cranberry jelly
1/2 bottle light Catalina dressing
1pkg onion soup mix
Put all in the crockpot and cook on low for 8 hrs.

5 Skinless boneless chicken breast.
1.5c salsa (preferably homemade as you can control the salt)
I chopped onion
1.5c celery diced
1 can black beans drained and rinsed
I sm can tomato paste
6 med tomatoes chopped
1 tbsp cumin powder
2 tbsp chile powder
1 tsp cayenne pepper or more
2tsp paprika
1/2c pot barley
125 g light Philadelphia cream cheese
Shredded cheese ( kraft light)
Fat free sour cream ( optional)
8" whole wheat flour tortilla
Place everything in the slow cooker except the cheeses and sour cream
Slow cook on high for 4 to 5 hours
Shred the chicken and mix in the cream cheese
Place on flour tortilla, top with a little shredded chease and roll up and place 6 in a 9 x 13 pan
Sprinkle burritos with a little more shredded cheese
put in oven until cheese melts ....about 10 mins
Serve with a dollop of sour cream on top
Each burrito is 300 calories0 -
