    I like it one of three ways:

    Plain with black pepper
    Mixed with pineapple
    Mixed with a packet of Truvia, cinnamon to taste, and a diced apple

    STUFFED SHELLS

    1pkg. (10 oz.) frozen chopped spinach, thawed, well drained (I used 2 cups fresh baby spinach)
    1container (16 oz.) Fat Free Cottage Cheese
    1red pepper, chopped (I omitted on accident, still good)
    1egg white
    1env. (0.7 oz.) Italian Dressing Mix
    1cup Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
    20 jumbo pasta shells (for stuffing), cooked, drained and cooled
    1jar (13-1/2 oz.) spaghetti sauce

    HEAT oven to 400°F.

    COMBINE first 5 ingredients in medium bowl. Stir in 1/2 cup mozzarella; spoon into shells.

    SPREAD half the sauce onto bottom of 13x9-inch baking dish. Place shells in dish; top with remaining sauce and mozzarella. Cover.

    BAKE 40 min. or until heated through, uncovering after 30 min.

    This was SO super yummy. The cottage cheese takes the place of what would traditionally be ricotta, because cottage cheese is far fewer calories and salt, but similar in texture. I'm not a huge fan of the stuff, but these were divine! Only 340 calories, 7g fat!!!

    w/ mandarin oranges and cinnamon

    w/ tomato, cucumber and red onion and italian seasoning

    dice up veggies, mix with seasoning- put on top of small portebello mushroom cover with shredded cheese and bake :o) yummy giant stuffed mushroom meal :o)

    i saw something on pinterest.....chop up some cucumber, green onion, green peppers, mix it with cottage cheese, and put it inside a tomato. It looked amazing!!

    I like to eat it these ways:
    with chopped tomato & avocado with black pepper;
    with a bit of fruit like peaches or pineapple;
    mix with salsa, put on a whole wheat tortilla pop in microwave until it gets melty - cottage cheese quesadilla;
    grill chicken breast with balsamic vinaigrette and onions, slice and put on top of cottage cheese with avocado chunks;
    on toasted 100 calorie bread with a slice of tomato and black pepper;
    with couscous, sun-dried tomato, cucumbers, fresh tomato and a touch of oil & vinegar;
    in a whole wheat tortilla sprinkled with cinnamon and heated in microwave (I know it sounds weird but it's delicious);
    fill celery stalks with cottage cheese, top with cucumber slices
