what to do with cottage cheese?

plain or with some salt and pepper
when I didn’t watch what I ate dip it up with corn chips
any kind of fruit (drizzle a little honey if you like)
with tomatoes and a little rice vinegar
I got this from a close friend (I call it white girl enchiladas)
take an enchilada shell and layer in seasoned ground beef (cooked) I also add in a little onion and taco seasoning to meat then add some cottage cheese, layer in some shredded cheese of choice and a little tomato, cilantro or any other add in for a enchilada rollup and do as many as you wish and lay out in a pan and cover with shredded cheese and some parmesan cheese and green enchilada sauce and bake at 350 degrees til top is bubbly and hot.
Lower fat than sour cream
Also as an add in to a jello/cool whip fruit salad
Let jello (larger box) set up and shred up add in fruit of choice some whip cream and about 1/2 of cottage cheese to what you use of fruit.

I'm low carbing (Diabetic and lap banded) so love cottage cheese with davinci pineapple sugar free syrup. I also used it instead of ricotta in a cheesy spinach bake (which I am sure could be made lower fat if you are not on a low carb type diet by using low fat cheese and such). We omitted the butter and used pam even tho we are on Atkin's diet:)

We also added some mushrooms and will add some plain artichoke hearts next time for more nutrients and fiber!
The way that we made it (omitting onions due to gastric issues), it only had 147 calories a slice (I"m banded so that was enough for me and my husband ate something else with it)0 -
I love to add a little chunky canned pineapple (w/ a splash of the pineapple juice) into cottage cheese.. it's more like a dessert this way, and is sooo good.0

Was never a big fan of cottage cheese, but then I tried Fiber One cottage cheese and I love it. I mix it with crushed pineapple, in pineapple juice, not syrup, and mandarin oranges. It's a great snack and loaded with protein.0

I love to make banana nut protein pancakes with it!!!!
1/2 cup rolled oats
1/2 cup cottage cheese
1/2 banana
3 egg whites
2 tbsp walnuts
1 tsp cinnamon
dash of nutmeg
1tsp vanilla extract
1 tbsp baking powder
Blend everything but the nuts in your blender until very smooth. Pour onto your skillet and sprinkle the nuts on top. YUMMMM!!!!0 -
I like it on top of Ryvita slices... the sweet red onion crackers are a particular fave!0

I eat it plain or with fruit on top, oranges, pineapple, peaches.
I've also made a lower calorie buffalo chicken dip with it because I love that stuff, I just put about equal amounts cottage cheese and shredded chicken and added Frank's Red Hot. I dipped celery and wheat thins in it, it was delicious!0 -

OMG.......you have to try this. Take a banana and heat it up in the microwave for a few seconds (i usually leave the peel on but open it up a bit) Something with heating it makes it sweeter and then just cut up and put on cottage cheese. Another way is to cut up apples (peeled or not) and mix with splenda and cinnamon, heat in microwave and put on cottage cheese (or oatmeal). Taste like heaven0

i seen a forum earlier, it was used in quiche.... i always eat mine plain, with my meal, but the recipe was simple. I think it was 2 eggs, a cup of cottage cheese and whatever veggies you wanted with it. combine it, pop in oven....not sure what the temp/time was though....0

I hollow-out half of a cantaloupe and fill the "bowl" with some cottage cheese.
It makes me think that more foods should provide their own bowl.0 -

I've made it sweet and I've made it salty. You can put a little sugar in there and it's really good... you can also freeze it to make it kind of like ... fake, lumpy ice cream. Or I put a little salt in there and it's a nice little salty snack. But I don't do that anymore because I'm *trying* to watch my sodium. I don't add salt to anything anymore. I've eaten it just plain and that's good, too. I've also put it in my lasagna in place of ricotta and it tastes fine there.0

I tried the cottage cheese with cocoa powder and splenda idea from this thread last night and I LOVED it. It reminds me of a fudgesicle. I think I have found my new favorite high protein snack.0

Spinach Pie
1 TJ's Gourmet Pie Crusts, thawed and placed in 9-inch pie dish
1 container (16 oz.) TJ's Cottage Cheese
1 package TJ's Shredded Cheddar Cheese
1 package TJ's Frozen Chopped Spinach, defrosted and drained
3 TJ's Large Eggs
3 tablespoons TJ's Flour
1/2 a stick TJ's Unsalted Butter, cut into chunks
Preheat oven to 375º F. In a large bowl, mix by hand the cottage cheese, cheddar, spinach, eggs, flour and butter. Pour mixture into the pie crust. Bake at 375º for 45 minutes. Let sit 15 minutes and serve. Recipe Credit: Trader Joe's 2011 HiiP Recipe Showdown Winner - Melinda Torres.0 -

How many does this make. This recipe is about 600 calories, so unless it makes 2 or 3 this is a high calorie breakfast.0 -

On top of a salad instead of shredded cheese--you need less dressing
With sunflower seeds and a tsp of jelly---yummy treat--lingonberry jelly is my favorite combo0 -
