    skinnytaste.com has an awesome recipe that can be done in the crockpot. It is called pollo en potacchio. One of my faves!

    1 hidden valley ranch dip mix

    cook on low heat for eight hours.
    put in tortillas or pita pockets

    I make this all the time, and franks has NO calories.... :D

    It might have no calories but an entire bottle has 14,160 mg of sodium.

  • I have found crock pot recipes are AMAZING when traveling. We took a 3 week RV trip and have had lengthy hotel stays when I packed our crock pot and used it in the hotel room. I don't have a ton of recipes, so this is a helpful thread, but crockpot cooking is a great way to eat healthy when on the go. :)

    Just made this! Tastes amazing!

    Greek style lemon chicken rice soup

    12 cups no salt added chicken broth (campbell's)
    6 skinless Chicken drumsticks frozen (it was what I had available. Can use 3 whole chicken breasts too)
    1/2 cup lemon juice
    1 cup rice (uncooked) (any rice will do. I used jasmine rice)
    10 cloves garlic
    1/4 cup Corn flour or any other flour (for thickening)
    a handful of fresh dill for seasoning
    sprig of rosemary for seasoning
    salt
    pepper

    Add the broth, chicken, lemon juice, garlic, dill,salt and rosemary to the crockpot. Leave on high for 3 hours (after about an hour, remove and discard the rosemary to avoid over seasoning). After 3 hours, if you use drumsticks like I did, take the chicken out and separate bone from meat, shred the meat with a fork and throw it back into the crockpot. Add the rice. Leave it on high for 35 minutes and switch it off. Even if the rice is slightly undercooked, its alright. It will cook because the crockpot contents are still very hot. Make a smooth and slightly watery paste with the corn flour and add to the crockpot while constantly stirring. Sprinkle some pepper and adjust salt if needed.

    Makes about 13 servings of 1 cup each

    Irish Lamb Stew:

    8 servings, generous 1 cup each
    Active Time: 30 minutes
    Total Time: 8 1/2 hours

    Ingredients

    2 pounds boneless leg of lamb, trimmed and cut into 1-inch pieces
    1 3/4 pounds white potatoes, peeled and cut into 1-inch pieces
    3 large leeks, white part only, halved, washed (see Tip) and thinly sliced
    3 large carrots, peeled and cut into 1-inch pieces
    3 stalks celery, thinly sliced
    1 14-ounce can reduced-sodium chicken broth
    2 teaspoons chopped fresh thyme
    1 teaspoon salt
    1 teaspoon freshly ground pepper
    1/4 cup packed fresh parsley leaves, chopped

    Preparation

    Combine lamb, potatoes, leeks, carrots, celery, broth, thyme, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the lamb is fork-tender, about 8 hours. Stir in parsley before serving.

    Tip: To clean leeks, trim and discard green tops and white roots. Split leeks lengthwise and place in plenty of water. Swish the leeks in the water to release any sand or soil. Drain. Repeat until no grit remains.

    I usually make a roasted chicken one night, and then break it down for a different meal the next night.

    one whole chicken, rinsed and patted dry. season as you like- I usually use garlic salt and lemon pepper, and some onion flakes, but you do what you like. then drizzle with a little EVOO, and I rub it in with the spices so it's nice and coated. 1/2 cup of water and 1/2 cup of white wine added. cook on high for 1 hour, and then on low for 6-9 hours depending on you slow cooker and the size of the bird.

    **the last time I made this I just did 1/2 cup of the white wine, and it turned out great, but if you like to use your own broth, or make chicken stock, then add the water and the wine.

    "Guy Food" -- my Dad loves this (no teeth, needs stuff easy to eat!)

    a couple pounds boneless skinless chicken thighs
    about 5-6 medium potatos, cut into bite size cubes
    1 can Campbell's Cream of Chicken OR Cream of Chicken with Mushroom


    rinse the chicken and spread on the bottom of the pot
    cover with the can of creamy soup (I use a spatula)
    add the potato cubes

    salt/pepper optional

    cook on high about 4 hrs, turns out like a chicken stew

    today I put a whole chicken in the crock pot and covered it with water a little salt, pepper and garlic and let that cook for about 5 hours and the chicken was falling apart when I took it out of the crock pot.
