My new favorite.....
1 pkg. chicken tenders
1 can cream of chicken soup
1 package taco seasoning
1/2 cup salsa
Mix all ingredients together in the crock pot. Cook on high for 4 1/2 hours. Serve in a low fat tortilla or on white rice. The chicken itself is only 268 calories per serving!!! With 1/2 cup of rice or on a low fat tortilla it is 368!0 -

I just found a recipes for shredded chicken wraps.
Put thawed chicken breasts in the crockpot and cover with salsa. It says to add taco seasoning but I tried fajhita seasoning also and it tasted great. Cook on low for 6 hours and you should be able to shred the chicken. Serve on tortillas with whatever you like.
I make this pretty frequently, but I also cut up an 8oz. block of fat free cream cheese and let it melt down. It's delicious!0 -

^^^ this is amazing, we make these tacos all the time! It's a couple chicken breasts, 2 cups salsa and a packet of taco seasoning. We use low sodium... they are so juicy and my 7 year old loves them too! Very light, I think it came out to about 40/50 calories per serving (makes a ton) so it's around 150 with a tortilla. Yum!0 -

1/4 cup flour (to make gluten-free use 2 tbsp cornstarch instead)
2 cups water
4 cups fat free milk
1 large celery stalk, chopped
1/2 medium chopped onion
8 oz sliced baby portabella mushrooms
2 chicken bouillons
fresh ground pepper
pinch of thyme
10 oz frozen classic mixed vegetables (peas, carrots, green beans, corn)
2 potatoes, peeled and cubed small
16 oz cooked chicken breast, diced small
salt
Create a slurry by combining 1/2 cup of the cold water with flour in a medium bowl and whisk until well blended. Set aside.
Pour remaining water and milk into a large pot and slowly bring to a boil. Add celery, onion, mushrooms, chicken bullion, thyme, fresh pepper, frozen vegetables and return to a boil. Partially cover and simmer on low until vegetables are soft, about 20 minutes. Remove lid, add potatoes and cook until soft, about 5 minutes. Add chicken, and slowly whisk in slurry, stirring well as you add. Cook another 2-3 minutes, until soup thickens, adjust salt and pepper to taste and serve.0 -

I usually make a roasted chicken one night, and then break it down for a different meal the next night.
one whole chicken, rinsed and patted dry. season as you like- I usually use garlic salt and lemon pepper, and some onion flakes, but you do what you like. then drizzle with a little EVOO, and I rub it in with the spices so it's nice and coated. 1/2 cup of water and 1/2 cup of white wine added. cook on high for 1 hour, and then on low for 6-9 hours depending on you slow cooker and the size of the bird.
**the last time I made this I just did 1/2 cup of the white wine, and it turned out great, but if you like to use your own broth, or make chicken stock, then add the water and the wine.
you can also just use 1 cup of water, if you don't want to use any wine.0
