    I'm forcing myself to wait til tomorrow to make this because it looks like a winner. I entered all the ingredients and calculated a pie plate as 4 servings. That means you get a full 1/4 - pretty hearty - for...wait for it...162 calories! Or if you make it in 8 ramekins or 8 muffin cups you could eat 2. I can't wait to try this!

    My recipe is as follows:

    2 large eggs
    16 oz container lowfat cottage cheese (I got 2%)
    1 onion
    3 mini sweet peppers
    1 cup baby spinach
    1 tsp olive oil to saute veggies

    It's 162 calories per serving, 12 carbs, 7g fat and 14 g protein per serving.

    Switching to 1% milkfat cottage cheese and skipping the olive oil for sauteeing would lower the counts even more.

    Sounds like a winner!! :bigsmile:

    Not my recipe but I made it and it is very good especially cold in the summer. I baked at 350 for 25 mins. but check because it can still be wet ENJOY

    Just wanted to say thanks to the person who gave this recipe

    500g cottage cheese
    2 beaten eggs

    mix together and add quiche like vegetables mushrooms, peppers etc put into a flan dish and bake for about 25 minutes

    its LUSH

    Made this tonight with 2 cups 1% cottage cheese,
    1 cup egg whites,
    Lightly precooked 1/2 a sweet potato,
    2 handfuls of spinach,
    1/4 red onion,
    1 clove garlic in a saucepan with a bit of vegetable stock.
    Mixed it all togther with some sliced kalamata olives.
    Used an 8x11 pyrex dish (sprayed with Pam) and shredded 2 Tbsp skim mozza and 1tbsp of parmesean on top and baked for 35min at 350F
    Soooo good! Would like to try it subbing 1/2 the cottage cheese for Ricotta next time. I think it might stiffen it up a little as it was a bit delicate. And also i might bake it at 400F next time.
    And for all the cottage cheese haters - My dinner guest could not identify the cottage cheese..... ;)

    Finally made this - it was absolutely delicious.

    Added spinach, shrimp, onion, and bacon - no crust.

    340 calories per serving, quiet filling, and yummy!

    Made this last night - used a ton of veggies; broccoli, peppers, mushrooms, onions. Sprinkled two tablespoons of parmesian cheese over the top before baking. Had to cook it for much longer than 25 minutes - closer to 45-50 but it was AMAZING! Even my husband loved it!

    Came out to 157 calories for 1/4 of the pie plate - we both had 1/2 of the pie plate for dinner with a side salad - filling and delicious!

    4 individual servings at about 340 cals each

  • I use a load more eggs - i use about 350g of virtually fat free cottage cheese and 6 eggs.. few slices of bacon (fat trimmed) all mixed together them poured into a quiche dish and cooked for about 30-40 mins on gas mark 5 til golden brown

    i add 30 grams of low fat cheddar aswell to the mix

    absolutely lovely and serves a few people

    nice with cottage cheese and chives too

    O.M.G!! I made this tonight, but I made it in a regular pie pan and cut it into 8 servings to have as a side dish.

    I sauteed 4 mushrooms in a little bit of butter with minced garlic and added that to the mix with some onion, swiss cheese and some chopped ham.

    It was FABULOUS!!
