Ok, so I finally tried the famous Cauli pizza and OH WOWWWW we all loved it at my house. I told my kids it was a secret healthy pizza but never mentioned it was made with cauliflower since they hate it, so they say, and once they tried it, it was love at first bite, then I revealed the secret ingredient and they could not believe it! Even my picky husband and my mom tried it and loved it! This will be our new favorite! Thanks so much for the recipe...

Oh my goodness-- I just realized that at least one of you is COOKING your cauliflower before you try to make your crust!

That's cause most if not all of the recipes that come up on Google for Cauliflower Pizza crust states that you should microwave/cook it.

    http://yourlighterside.com/recipe-the-original-cauliflower-pizza-dough-2/ "cooked" cauliflower
    http://recipes.sparkpeople.com/recipe-detail.asp?recipe=249048 "cooked"
    http://stickafork.net/2012/04/16/cauliflower-crust-pizza/
http://www.recipegirl.com/2012/01/16/cauliflower-crust-hawaiian-pizza/ "microwave cauliflower for 8 mins"
    http://detoxinista.com/2012/01/the-secret-to-perfect-cauliflower-pizza-crust/ "steamed"

Huh! I guess I missed that part!

I never do it, though, and haven't had any problem. I suppose it WOULD help the mushy crust people if it dried it out, some.

    Thanks for pointing that out!

    -Chelle

I have been cooking it first. I'll try NOT cooking it next time and see if that works.

Thanks for your help on this!

Okay, so I tried this Monday night. I made 4 of them from 1 head of cauliflower for my skeptical family and took 1 to work for my equally questioning co-workers to try. BIG HIT! Everyone loveddddd it! Even though they had been warned the crust was made with cauliflower, they still couldn't taste it or believe it! Thank you for sharing this.

I might add that I seasoned the pureed tomatoes with Garlic powder, oregano, salt & pepper. As well, I added a bit of parmasean cheese to the crust after baking and to the top of the pizza when finished cooking. I also cooked this with closer to 1 cup of part skim cheese and the calorie count was closer to 450 calories.

    Very YUMMY!

Thank you, thank you, thank you!
