So, your choices are quit, or track it and move on. The second one is going to be more effective in reaching your goals, so I'd do that. Don't expect perfection. You'll never reach it. Consistency and mostly good choices are better goals.

I have cheap, nice-looking tie racks for my medals from The Container Store. (I also use them for my necklaces.) We had them hanging near our treadmill but they are too attractive to toddlers, so now they're all in a drawer and have become toys/dress-up items. Some day they'll be hanging up again!

I would ask yourself and them what medical problem the phentermine is supposed to be solving. You could be drastically underestimating your food, but it sounds like something else is going on. I would definitely get a second opinion.

Everyone I've met who hates running describes exactly what you're saying - out of breath, stitch in side, etc. That should only happen, if at all, when you're doing speed work/sprinting, which is totally unnecessary for a beginner (or even for an old-timer who is not particularly concerned with pace, like me).…

Another quicker/easier cauliflower idea is the cauliflower "rice" - really quite good. Lots of recipes out there but basically - saute with olive oil, salt and garlic. Yum!

Invite them without judgment - "I'm going to do this thing if you want to come." Mostly they won't, and that's OK. Then join a local running group or hiking group and make some more active friends. Then you have dinner friends and hiking friends both!

String cheese, crisp bread, carrots/celery, nuts, V8, soup in a mug (I like the instant miso packs), spoonful of almond butter, if you live near a Trader Joe's they have lots of little microwavable wontons, pork buns, etc. that are filling but not calorie killers.

Standing for an hour burns about a calorie per pound of bodyweight. (120 pound woman burns 120 calories, etc.)

Processed food is cheap and has a higher profit margin. You will have to look very, very hard to find a store that doesn't sell it. Fortunately, you can just choose not to buy it.
