  • I roast my cauliflower with cloves of garlic and a light olive oil drizzle, then puree and add Greek yogurt and a touch of melted butter and Parmesan cheese to taste. It is to die for yummy if you crave mashed potatoes.

  • I love cheese--it is satisfying to me in small amounts. Gordon Food Service sells several different kinds of cheese in cubes that are only 25-30 calories a piece. Havarti is my favorite. I'll eat a couple of cubes with an apple or a couple Triscuits or just by themselves.
