A mini rant
So, I am the exact same weight today as I was 20 days ago. This despite suffering an explosive stomach virus starting the day after that last weigh in, eating almost nothing for four days, then returning to my normal, very measured "diet", the same amount of cals/macros on which I was averaging 2-3lbs a week loss prior to…

Lowish carb chili
Ummm deliciousness. I love chili, but all the store bought chili's, even the bean-less sort, are carbed up with stuff. So I made home-made chili, the macros aren't bad: 1 cup serving size (240 grams) 391 calories 27g fat 25g protein 11g carbs 5g fiber Most of the carbs are from the crushed tomatoes and (minimal) tomato…

Cream cheese
Why the hell is kraft philadelphia cream cheese now 2g carb per brick? wha *kitten*?

Gastroenteritis
While I have lost 6.2 lbs in 48 hrs (yeah, I'm magic) due to the wonders of only eating 700ish calories Saturday (most of which came violently out one end of the other, oh and also out my nose) and drinking 38 calories yesterday and 20 today (chicken stock and low or no sugar sports drinks plus as much water as I can…

Baking day
The kids and I made a double batch of peanut butter cookies, gingerbread cookies(decorated too!), and whipped shortbread. I ate none of ut, wheee! My 14yo also made a batch of Heath bar fudge. My reward for good behavior was a half pound ribeye steak. Yummy!

Another little milestone today
When I started this, on April 18th of this year, my BMI was a whopping 55.4. Full on class III morbidly obese. Today, my BMI is 39.6, which is class II obesity! Woot!!

Speaking of cholesterol
So since this has been a topic of recent discussion: I had my cholesterol checked 8/13 and the numbers weren't too "bad". Total: 172.7 Trig: 95.36 LDL: 154.72 HDL: 33.02 As I said in a previous post, the LDL/HDL was a little worrisome, but I was continuing to lose weight, and my Trig/HDL ratio was 2.89. Again, not bad but…

Landmark day
That is all.

Today is the day I hit three digit weight loss!
I am so excited! And while I have a long way to go still, I feel more motivated than ever.

Cheesy Spinach
3 tbsp butter (I use kerrygold) 1/2 tsp salt 1/2 tsp granulated garlic 1/4 tsp black pepper 1/4 tsp paprika 10oz bag spinach 2 tbsp hwc 112 g (4oz) fresh-shredded sharp or extra sharp cheddar Melt the butter with the spices over medium heat. Add the spinach and wilt to your liking. Turn heat down to low, add hwc and…

Keto cheese sauce
This made enough for one person, can easily be scaled upward: 1/4 cup hwc salt&pepper&paprika to taste 3/4-1 tsp dijon mustard(I used 1, but love dijon) 28g freshly shredded sharp or extra-sharp cheddar In a small pot, bring the hwc and seasonings to a slow simmer over medium heat, stirring occasionally with a spatula.…

The problem with coconut oil in coffee...
is that when some klutz splashes onto their khaki shorts, it leaves oil stains! :s

Keto lunch!
2 servings of pork rinds and a dip made from: 2oz guacamole (mini cup) 4 tbsp sour cream 14g real bacon bits 14g shredded sharp cheddar cheese 469 cals, 4 net carbs, 37 fat, 26 protein. B) Love it!

Coconut oil
unfortunately tastes like coconut, not a flavor I favor. When I used to to pan fry some potatoes for the fam, the whole house (to me) smelled of coconut. I put some in a smoothie today, with almond milk and chocolate protein powder and it was okay, but I can't imagine roasting vegetables and such in it. Going to try adding…

Best chicken thighs EVER!
And super easy. My two kids who ate them raved like crazy people, lol. Season 3-5 bone in skin on thighs generously on the skin side with salt and pepper. Lay them skin side down in a non stick pan that has a lid. Turn on heat (yes, start with cold pan) on high. As soon as they start to sizzle, put the lid on, drop the…

First ketostix today
And it was an amazing purple color, matched perfectly to the second darkest block on the container! Whoot.

Magnesium
400mg per day (two 200mg tablets, one first thing in am, one around dinner) have made me overly "regular". I got mag citrate and apparently I am quite sensitive to its laxative effects. I am going to try cutting back to 1 tab a day, anyone have any advice?

Psyllium porridge
I made this today, and all I can say is... ehhh. It worked, but I'd much rather just drink it down in water and be done with it.

Ketogenic ratios
I eat at 1350 cals and this works for me, in fact I sometimes end up under. I am trying to work out my ratios for ketogenic diet. If I go 65% fat, that is 98g, and 45g carbs (20 net after the 25g fiber I shoot for daily), that is 13% carbs, leaving the last bit to be about 22% or 74g protein... does that sound right?

Food you never thought you'd like.... but do now?
For me, it's spinach. Growing up and even until a couple months ago, the stuff just grossed me out. Today for lunch, I had 5oz of baby spinach sauteed with bacon fat, shallots, garlic and a splash of red wine vinegar. Love that stuff.

Flirting with the idea of Keto
So, I have already lost 77lbs since April 18th, so obviously I am not overly struggling with the weight loss, yet I am flirting with the idea of keto anyway, and the main reason is, I seem to eat fairly low-carb as is. My net carbs for the last three week work out to about 54 daily, (total-fiber) and my fat is up to about…

I love that...
A 10oz wood-fire grilled ribeye at Outback fits into my calorie goals for the day, as well as my macros. Ummm.... steak!

My LBM
is currently actually higher than my goal weight. Hrm. And my goal weight is not super low for my height, 155 for 5'9". According to my body composition test I had done today, my BF% is 45.4% and my LBM is 169.3. Interesting. I take the numbers with a grain of salt, as I know they are not iron-clad accurate, but still an…

Looking for some advice re: cholesterol
Specifically from people who have modified it through diet. My total cholesterol is 172.7, definitely high side but down about 15pts since last time it was checked (thank you, weight loss). My triglycerides are good at 95.36. What I am really looking for is advice from people who have modified their LDL through diet. Mine…

Follow up to things I learned yesterday...
I got back on the horse. Did my circuit routine again today even though my legs were still very sore. Doubled up my modified wall push ups (from 2 to 4 sets of 10) and my dumbbell rows (same, 4 sets of 10 instead of 2) and upped from an 8lb dumbbell to a 10lb dumbbell. Made sure to stretch well after! Thank for all the…

Egg white oatmeal
I tried this, because I am trying to incorporate oatmeal into my diet, while keeping my protein up.... the results are... interesting. Anyone got any good recipes? I think I'm going to try overnight oats instead, cause this is weird as hell texture wise.

Lessons learned yesterday...
Apparently 40 squats (during which I am sure my *kitten* came nowhere near to actually low enough to be called a proper form squat) in one day was entirely too much for this fat, out of shape lady. I literally find myself using the hall bathroom because I am grip the door-frame and the front of the sink when I sit down on…

I made Mexican Rice
For my kids to eat with leftover chicken and peppers from our dinner last night for tonight's dinner (yay leftovers, cause we're on the run) and it smells so bloody good that I debating reworking my food log to fit some into my lunch, lol.
