    I grilled some salmon with a homemade honey mustard sauce (fat-free) and had steamed green and yellow beans with soy sauce, ginger and a touch of sesame oil. My husband and the kids had some bread and butter as well, but I skipped that and used the calories on wine instead.

    Was planning on having organic carrot cake for dessert, but the shop was out. It's a bowl of grapes for dessert now.

    Everything sounds so good.
    I water sautéed some garlic, onion, mushrooms, carrots, shrimp and lastly spinach. Mighty tasty and have lots of leftovers. I'll cook some mung bean fettuccini to toss with it for lunch tomorrow.

    Hey, that sounds delicious! Similar to my favorite "garbage casserole" recipe - basically clean out all the vegetables in the produce bin before they turn, toss in some leftovers, make some pasta and voila, its a seriously delicious meal (with a funny if unfortunate name around here).

    When I do that I call it "Leftovers Supreme" :tongue:

    I am going to brave the waters and make Eggplant Parmesan for the first time. They had eggplants on sale 4 for $5 at Fred Meyers last night! Hope it comes out good!

    Do you think its okay to use crushed up crackers instead of Panko bread crumbs
