Cilantro-Lime Chicken
*16 oz of chicken (or more and yes, this can be put in frozen)
* 2 cans of black beans, rinsed and drained (no salt added)
* 1 red onion, chopped
* 1 bunch cilantro, chopped
* 3 T. lime juice
* 3 garlic cloves (or 1 t. garlic powder)
* 1 t. cumin
Low for 8 hours. If you go silly and forget to drain the beans, it turns into chili. :ohwell:
Salsa Chicken
*16 oz. of chicken
* 1 jar salsa (I prefer Newman's Own, because nom and low cal).
Low for 4-6 hours. Shred, serve over whatever you want. I like it over brown rice or quinoa.
I do this same salsa chicken recipe except I use it in wraps with shredded cheese.0 -

This is my go to receipe.
1lb Boneless, Skinless Chicken Breast
16 oz Hot Salsa
1 Can Black Beans, no sodium added rinsed and drained
1 Can Corn
Put in crockpot for 8 hrs. About a half hour before done shred chicken and let cook for another half hour.
You can serve this in a lettuce wrap with avacodo, over brown rice, in a salad or even all by itself. Very yummy!0 -

Your crockpot can double as a roaster by simply putting the meat on foil balls. Crockpots don't need liquid to cook. If you prefer to put you can fill to half the foil balls and it steams some. I make everything in the crockpot, pork chops, chicken, turkey, steaks.... not everything has to be in a sauce this way.0

Italian Beef Sandwiches
Whatever size/style of beef roast you normally buy (I like chuck roast, about 2-3 lbs)
1 jar of whole pepperoncini peppers
1 beer
1 packet Good Season Italian Dressing (dry packet)
Put the roast in the slow cooker, pour the pepperoncini in with the juices, add the beer, sprinkle the Italian dressing over the top. Cook on low for 8-10 hours, shred the beef, return to the juices, serve with sub rolls and cheese, can add giardinera if you like.
This is absolutely one of the best things I have ever tasted. Made this for super bowl Sunday and EVERYONE loved it!!!0 -

I also suggest an electric pressure cooker - not the old type that used to explode on the stove. These can multitask (steam, brown, slow cook and pressure cook). On pressure cook it works just like a crockpot but in 1/4 - 1/2 the time! I have done a whole chicken in 20-30 minutes and a 3 lb. roast in 45. Chili, meatloaf, soups, just about anything you can think of from frozen or thawed. This is great if you forget to prep ahead and want a good homecooked meal with slowcooked taste!0
