I'm curious as to what you all are eating for lunch. I'm a little tired of sandwiches. so what did ya have?

    Leftovers from dinner last night, so a pork chop & green beans. I'm only cooking for two, so my lunch most days are dinner leftovers. 345 calories.

    A slight variant... Whole wheat pita with hummus, tabouli, sliced cucumber, sliced tomato and spinach.. 282 calories.

    Monday night I made "garbage soup" with all of the ingredients I had left in the fridge that need to be cooked before it spoils:

    Chicken Broth
    Chicken breast
    Kale
    Spinach
    Swiss Chard
    Cauliflower
    Onions
    Garlic
    Seasalt, pepper, cardamom and other spices to taste
    A bit of hominy for thickness

    Been having it for lunch every day... so YUM.

    A sandwich and chips. It's what I eat every. single. day.

    I still like it though. I toast the bread and it makes all the difference to me. :)

    I didn't get to cook last night, so whipped up some quinoa this morning, steamed some string beans, and have a green apple to go along with it.
    I don't know if it is helping, but i've been having light dinners such as salads, and anything i whip up for the hubby for dinner, i save for my lunch =)

    Tuna salad, it was a buffet and really really hard to resist. But I did :-). 1 scoop tuna, lettuce, tomatoes and 1 piece of rye bread.

    I'm eating my homemade tuna salad with a nice spicy kick to it and 5 whole wheat crackers for lunch.

    My tuna salad recipe has

    1 can of wild tuna drained and crumbled,

    1 hard-boiled egg chopped,

    1 teaspoon of diced red pepper,

    2 tablespoons of sweet pickle relish,

    1/8 cup of miracle whip,

    1/8 cup of Louisiana's Fish Fry Remoulade.

    I stir it all up and add paprika on top. I eat mine with crackers but you can eat it on bread or with lettuce, your preference.

    Had 2 sandwiches. Both on nice ciabatta bread. One was leg ham and cheese, the other was chicken with sundried tomato. I spread them about half an hour apart. They made me very happy for the day :D

    Salad: Spinach, snow peas, celery, carrots, red onion,mushrooms, red peppers, hemp & pumpkin seeds & a few slices of avocado. Dressing = raw garlic + balsamic vinegar + olive oil.

    and three tablespoons of light yogurt with two tablespoons of crunched up raisin bran granola but i havent added that up yet. Should do it now!
