    I have a great 24 page pamphlet of great recipes and tips when it comes to using your slow cooker that I received from my nutritionist a year or so ago. What is really nice about it, is she has included the nutrition facts for the recipes so you know how many servings there are and the contents of each serving!

    If you split this into 10 servings, each one would be about 260 calories :)

    Taco Soup:

    Ground Beef - 1 pound (can substitute for two baked, shredded chicken breasts)
    Garbanzo Beans (chickpeas) - 1 can
    Black Beans - 1 can
    White or Red Kidney Beans - 1 can
    Tomato Sauce - 1 can
    Diced Tomatoes - 1 can
    Whole Kernel Corn - 1 can
    Taco Seasoning - to taste
    Chili Powder or Hot Sauce - to taste

    Mix Garbanzo Beans, Black Beans, Kidney Beans, Tomato Sauce, Diced Tomatoes and Corn in the slow-cooker (it is up to you whether you want to drain the beans before or not. If you don't, you'll want to add more water in the end).
    Brown the ground beef in a skillet, drain. - If you prefer to use chicken, bake two chicken breasts with 2tsp. olive oil, then shred them.
    Add the meat to the slow cooker and mix.
    Add however much taco seasoning you like, I usually start with a couple tablespoons and taste and see from there. If you like it spicier, you can add some red chili powder or a hot sauce.

    This soup is pretty hearty, but if it seems too thick (especially if you drained the canned ingredients) add water to get it to the desired thickness.

    Depending on your time frame, let cook on low for about 5 hours, or on high for 2 or 3 hours, until heated through.

    4 chicken breast
    1 can cream of chicken soup
    1 can water
    1 can ro-tel diced tomatoes and green chilies
    (heat up to you) (i use hot)

    add all ingrediant to crock pot cook low 4-6 hours
    i have also used beef chunks (2inch pieces) cook 8hrs
    serve over rice or egg noodles

    lemon chicken,

    4 chicken breasts, bone in works best
    3 or 4 whole lemons cut into wedges
    one onion, sliced into rings

    place everything in crock pot, cover with chicken stock, takes about 2 or 3 cups
    cook on high for about 3 or 4hrs depending on your crock pot.

    when its done, plate it, and enjoy, the wolrds easiest recipe ever and so tasty...
