heres a recipe i made tonight ...never ate egg plant before until today ,not 2 keen on it !! but for everyone that likes egg plants heres a awesome recipe !!

    Skillet Eggplant Parmigiana

    Serves: 4

    Cooking Time: 30 min

    Ingredients
    3 egg whites
    1 1/2 cups Italian-seasoned bread crumbs
1 medium eggplant (about 1 pound), cut into 1/4-inch slices
    1/3 cup olive oil
1 (24-ounce) jar marinara sauce, divided
1 1/2 cups shredded mozzarella cheese
NOTE i also added boiled chicken breast chopped up and layered in middle !!!!
    Instructions
1.Place eggs in a shallow dish and beat lightly. Place bread crumbs in another shallow dish.

2.Dip eggplant slices in egg then place in bread crumbs and pat crumbs lightly onto both sides.

3.In a large skillet, heat 2 tablespoons oil over medium heat until hot. Fry eggplant 1 to 2 minutes per side, or until golden, adding more oil as needed. Remove to platter.

4.When finished frying eggplant, discard oil and place 3/4 cup sauce in skillet. Layer with fried eggplant then spoon 3/4 cup sauce over eggplant and sprinkle with 1/2 cup cheese. Repeat layers 2 more times, finishing with sauce and reserving 1/2 cup cheese.

5.Cover and heat 12 to 15 minutes on medium-low heat. Remove cover and sprinkle with remaining cheese; cook 3 to 5 minutes, or until cheese is melted. Serve immediately.

Went to Zumba class tonight!!! Soooooooo fun the class was packed. She had us jumping and playing air drums till I was ready to drop!!! I was going to count that as my jump roping but I have decided that is a cop out! I'm gonna go find the jump rope for tomorrow or maybe I'll try 5 mins tonight. Gotta hit the showers and get to bed. Work is getting in the way of my fun and fitness:glasses:

Will jump during the 30DS (and add a minute after).

*Love* the idea of paying myself to lose. I'll be putting away 5 euro each time... so I'll get a nice 100 euro reward at the end... can't wait! It will probably become clothes :)

5 minutes & 5 dollars -- Thanks for the reminder that every little bit adds up.
  • So I was in my office this morning and my computer was updating itself. Instead of sitting at my desk waiting for it to upload I did 5 minutes of "jumping rope" (jumping at my desk without a skipping rope)!!! 5 minutes down, 25 to go!

It is official I  skipping. Fancied some ice cream and popcorn tonight, as it is date night but would have put me over on kcals. So I did 15 minutes of skipping and now I can have ice cream and also half way through my skipping :flowerforyou: :flowerforyou:

I think from now on if I fancy ice cream ect I will use this as a benchmark if I want it bad enough I should skip for it.
  • I love this weeks challenge !! I'm deffanitaley going to need it since I will be consuming cake and few dinners this weekend since tomorrow is my 21st birthday!!!! Not as excited as I always thought I would be for this day, but hey growing up in Louisiana means I've been getting away with it all before so the only thing is I'm actually legal to do it now. Lol. The casino is the only thing I haven't done before, an I'm not really feeling like going. I love being a part of this group, it's nice to know I'm not alone in my struggle. I will be going kidnap my cousins jumprope tonight! As for the other challenge things are tight right now so idk if I'll beable to do it every week but like everyone else I would love to by a hot new outfit for Christmas!!
  • Wow I did 5 mins skipping and it was hard! I always used to want to skip 100 in one go after watching the secret garden when I was younger and maybe soon I'll be able to achieve that goal :-)

Aaaah, I'm having a hard time jumping rope!!! I keep getting it caught under and can only manage to get 2-3 jumps at a time. Yesterday the weighted hula hoop I ordered finally arrived and I didn't have much luck with that either--I couldn't get it to stay up.

I have my work cut out for me!!!

My scale is just not moving. I'm exercising 6 days a week, under my calories everyday, watching my salt, carb intake and drinking my water (bleah) This is aggravating!! *sigh*. Ok just had to vent! Skipping is fun, but dangerous for me with a actual jump rope LOL. I'm going on a long weekend mini vacation. Hopefully it will kick start my weight loss again.

Well, I went and bought myself a skipping rope and plan on starting this challenge tomorrow. I used to love skipping rope. The only problem is, I want to do it in private and don't know if I'll be able to do it in the house... my exercising issues, but I'll get over it.

On another note, the last few days have been crazy! I haven't had any time at home... hardly. Yesterday was my 6 year anniversary with my fiance and he got into a car accident. He's ok, but sure was a crazy way to spend our anniversary. Our plans kind of had to shift for it. Now, he's fine, but his car is gone to the scrap yard... which also means that I have to get up and drive him into work in the morning, then come home and get ready for me to go to work... remember to go pick him up... it's crazy!

I just want one night to stay at home! Just one...

Have you tried upping your water, and taking a bit longer rest? I noticed when I'm working out a lot, that sometimes the scale won't move, but then if I just rest for like Fri, Sat, & Sunday, I'll magically be down like 3lbs come Monday. Its just the way my body is, so its just a suggestion. :)
