  • I am totally in FALL mode! Here is one of my favorite low fat high fiber and protein recipe for Chili

    Ingrediants:

    20 oz Jennie-O Extra lean ground Turkey
    1 TBSP Minced Garlic
    2 cups Bell pepper (any color)
    2 small onions chopped
    3 14.5oz cans Hunts diced tomato
    3 TBSP of tomato paste
    1 15oz can condensed Campbells tomato soup
    4 oz black beans
    2 15.5oz can of light red fat free kidney beans
    8-10 TBSP chili powder (to your own taste)
    1 tsp ground cumin
    2 whole bay leaves
    1 TBSP garlic powder
    2 14.5oz Swansons fat free 33% less sodium chicken broth

    Brown turkey in pan with minced garlic then add everything into crockpot, cook on low for approx 5-6hrs or on high for approx 3hrs
    Makes 16 cups
    Nutrition (per cup) 156calories, 24g Carbs, 1g fat, 14g protein, 6g fiber, 725g sodium

    It is so cold and rainy here, and I made this almost exact recipe(I add a lot more spice via habenero, jalepeno, and Anaheim chili peppers) yesterday! It is one of my favorite slow cooker recipes. Great minds :drinker:

  • Crockpot Chicken and Sweet Potatoes

    1 pound boneless chicken breast (fresh or frozen)
    1 pound sweet potatoes diced
    1 can diced tomatoes (no salt added)
    1 can diced green chilies
    1 cup chopped onion
    4 ounces orange juice
    1 tsp cumin
    1/4 cup fresh cilantro
    1/2 tsp red pepper
    1 tsp black pepper

    Place chicken, sweet potatoes in crockpot and layer with tomatoes, green chilies, orange juice and spices
    cook on low for 6-8 hours or on high for 4-6 hours

    serves 4

    fat 3 grams
    sodium 307mg

    Are the green chilies hot?

  • Crockpot Pizza:

    1 can of Hunts Spaghetti Sauce
    1 small jar of Pizza sauce
    Package of Pepperoni
    2 bags of Kluski Noodles
    2 cups of pizza cheese (Italian, Motzarella, or mixed)
    Veggies/pizza toppings of your choice (I use green peppers, onions, black olives)

    Directions:
    Cook Noodles
    Sautee your veggies
    Add noodles, sauces, veggies, and pepperoni into crockpot
    Cover with cheese
    Let cook on low for about 2 hours

    Ingredients:
    1lb. Boneless Skinless Chicken Breasts (I put mine in frozen)
    1/2 cup of salsa
    1 bag frozen sweet corn
    1 can of black beans, drained and rinsed
    1 can of Rotel Tomatoes with Green Chilies
    Chili Powder
    S&P
    1/2 block of cream cheese (I use 1/3 fat free)
    1 small onion diced

    Directions:
    Put chicken in crock pot and cover with all ingredients except for cream cheese.
    Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
    Cook for 3-4 hours on high, 7-8 hours on low.
    Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
    Serve over rice or in tortillas as tacos/burritos.
    I usually top it with some shredded lettuce and diced tomatoes.

    Makes 6 Servings.

    I dont know if anyone has mentioned this yet, but sparksrecipes.com has lots of healthy recipes, just search on the site for crock pot or slow cooker :)
