I have some in my fridge and hadn't figured out what to make with them yet. I never thought to put them in the bottoms of the muffin tins when I made baked spinach mushroom cheddar omelettes last night. Will have to give them a try. Thanks!

Frozen corn, black beans, green chili, spinach, green onions, and low fat mexican cheese, cumin, chili powder, and cayenne.

    OMG...YUM!!

Are y'all frying...or baking in these??

A co-worker brought in Super Bowl leftovers which included the Buffalo Chicken Eggrolls ... so delicious! Love the idea for the southwestern egg roll as well!

And egg roll wrappers are different than wonton wrappers, correct? I got the wonton wrappers so I could do the taco muffin tin bakes and the lasagne muffin tin bakes. But I guess they are too small to make into wraps like with the egg roll wrappers.

Thanks for all the great ideas!

I have made pizza rolls with them a lot. That was back before I started dieting though. May try and do a healthier version of the pizza rolls now :)

When I first started using them, it took me forever to find them too. Then I realized they are kept in the fresh produce section. Try there. I have gotten them at Walmart, Kroger, etc.

The won ton wrappers are good too. I make mini bite things, same idea but with mini muffin pans and just a couple tbs of ingredients

CookingLight.com has a great recipe for samosas using egg roll wrappers. They are on the menu for dinner tonight since we liked them so much last week!

Thanks! I will check that out now!
