Here's a recipe I have for STEAMED WON TONS

1 lb boneless skinless chicken breast cut into 1 inch pieces
    1 large onion chopped
    1 Tablespoon fresh lemon juice
    1 Tablespoon grated ginger root
2 Tablespoons (around 6 cloves) of garlic chopped
    48 won ton wrappers

Put all the ingredients (except for the wrappers) into a food processor and blend until finely chopped. Place one teaspoon of this filling into the center of each won ton skin. Lightly moisten the edges so they stick together. Steam over boiling water in batches for 10 minutes each batch. Serve with a dressing of either a high quality soy sauce (tamari or similar if you like) OR serve with:

    Lemon Sesame dressing:
Take a small jar and fill half with toasted sesame oil (and or some EVOO) and the other half fresh lemon juice. Add 2 cloves of mashed garlic in it to taste. Shake and serve. Can also add salt/pepper/other seasonings to taste. (This is a very light dressing/all purpose marinade.)
    Yummy : P

I made mini sugar free strawberry pies this weekend.

You can use the standard sugar free strawberry jello and cornstarch filling or store bought sugar-free strawberry filling.

I made some in mini muffin tins for that "just a bite" treat and made others in a small 2x2 square muffin tin pan for a little larger dessert. Both we great and very few cals.

Also made taco cupcakes and french dip cupcakes, Check out Emily bites.com for recipes. So easy and good for taking lunch to work.
