I love to cook so my list would be pretty extensive. I try to have as few already prepared foods around as possible (though doing very badly at this right now because I'm getting ready to move). So most of what I keep around are ingredients for making stuff myself with the exceptions of things that are too time consuming to make, like breads and pastas. I run my own business so while I have time to cook I don't have THAT much time.
What I do think is essential is a well stocked supply of herbs and spices, they add little to no calories but loads of flavor that makes up for less fats and salt. The must haves on my shelf: basil, oregano, thyme, rosemary, paprika, bay leaves, cinnamon, cayenne pepper, crushed red pepper, nutmeg, dried ginger. whole peppercorns (much tastier freshly ground), kosher salt, garlic powder, onion powder (those last two are for dishes that fresh garlic and onion won't work as well it). I have a lot more but those are the ones I use the most. Also a good selection of liquids that lend flavor: vinegars, hot sauce. soy sauce (low sodium), liquid smoke, and lemon juice (or fresh lemons), these also give a lot of flavor for few calories.0 -
