Breakfast Pizza
Make your own cheese tortilla. . .. over med low heat, place some shredded cheddar cheese in a non stick skillet, spread it out and let it melt.
as it starts to stiffen, take a fork, you will know when it is ready to turn, and turn it. when tortilla is complete, place it on a paper towel and blot out the excess fat.
When it has cooled, place 1/4 cup low fat cottage cheese on top, place pepperoni slices, diced tomato and grated zucchini.
This is a wonderful breakfast full of protein and it is tasty too.
2 egg omelet
1/2 cup egg beaters (salt and pepper to taste)
2 Tbs chopped onion
1 thinly sliced mushroom
5 black olives sliced
1 large slice tomato diced
1 ounce cheddar cheese
Saute your onions in a non stick pan with Crisco butter flavored Crisco. When onions are transparent, spray generously with Crisco and add sliced mushroom and continue to saute for about 1 min. Spray again and add egg beaters and let omelet cook. Add olives, tomato and cheese. Fold your omelet and enjoy

good morning to you. MY husband is having a yard sale and left me to navigate on my own. this morning.
