We do shredded pork in the crock pot like this, but you could also do it with fresh chicken breasts (not the frozen kind. The frozen ones don't shred nicely):

It's delicious as is, but we usually add garlic, onions, and some more seasonings to spice it up a little. We also use only half the barbecue sauce to help keep the calorie count down.0 -

Pulled BBQ Chicken Sandwiches!
Thawed or frozen chicken (I usually use anywhere from 2-3lbs so we have lots of leftovers) and your favorite barbecue sauce (or make your own - it's REALLY not difficult to whip up a great barbecue sauce). Cook on low for 6ish hours - basically, until the chicken is cooked. Shred the chicken, and serve on sandwich roll of choice. I usually eat mine without a roll, or a whole wheat sandwich thin. My family FREAKS when I make this, and it's SO simple!0 -

Easy Crockpot Chicken Fajitas
You’ll need:
1 lb of Chicken Breasts
3 Peppers (Green, Red, and Yellow), sliced
1 Onion, sliced
1 Package of Taco Seasoning
Flour or corn tortillas
Toppings – sour cream, cheese, guacamole, etc.
Instructions:
1.Slice peppers and onions then place them on the bottom of the crock pot
2.Put Chicken on top of peppers and onions
3.Sprinkle taco seasoning on the top
4.Cook on low for 6-8 hrs (or high for 3-4)
5.The chicken looks burnt but it’s just crispy. Shred everything up and mix in the juice. Serve with tortillas and all the toppings – sour cream, guacamole, cheese, lettuce, etc.

Slow Cooker Mexican Pulled Pork
serves 4
1 lb pork tenderloin, or chicken
1 15 oz can tomato sauce, or one 12oz jar salsa
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon brown sugar
1/2 teaspoon cayenne pepper (I use 1 full teaspoon for more heat)
½ teaspoon salt
3 cloves garlic, minced
Place pork in the base of your slow cooker. In a small bowl, stir together all remaining ingredients. Pour evenly over pork. Cook on low for 8 hours. When done, shred the pork using two forks, pulling against the grain of the meat. Serve in warmed tortillas with shredded lettuce, sliced bell peppers, chopped tomatoes, black olives, grated cheddar cheese, and sour cream. Garnish with chopped scallions.0 -
