    My super delicious omelette trick is to use 1 tbsp of jarred bruschetta or red pepper spread (both from Trader Joe's). It adds so much flavor for just 25-30 cals!

    I saute a big batch of veggies to use in omelettes all week long (spinach, mushroom, etc).
    My standard scramble is a scoop of the veggies, egg whites, 2 tbsp lite mexican shredded cheese, and 1 tbsp red pepper spread. Best eggs ever!

    Four eggs, six pieces of bacon, handful of mozerella, guacamole, greek yoghurt, pizza sauce and baked potato wedges. Om.

    Moglet's Luxury Omelette:

    - two whole eggs
    - splash of milk
    - splash of soy sauce

    - 50g sliced chorizo
    - 50g soft goat's cheese
    - handful of spinach wilted in a teaspoon of easy garlic
    - 25g button mushrooms

    chorizo
    sliced red onion
    sliced mushrooms
    sliced peppers
    halved cherry tomatoes
    small handful of strong cheddar

    I like to leave the veggies out until the egg has firmed up so that they stay nice and crunchy

    I don't eat omelettes, I eat NOMlettes :D
    2 egg white, 1 egg, (from my chickens at home) 1/4 red bell pepper (or yellow - I'm open to options, but I like colour!), 1/2 onion, ham/bacon/chicken (or whatever meat is in the fridge), grated mozzarella (nice n stringy!), bit of salt, pepper n mixed herbs - - - NOM!!! Keeps me full for hours!

    Edit to add: potato is in there too, if there's leftovers in the fridge :D

    6 tbsp of egg whites from 2 chicks

    the usual spinach and red pepper

    or ham

    or one of my newest favourits

    Banana (slice or mash) with peanut butter (can be any nut butter, it works beautifuly!)

    I saute about 1/4 of a medium sized apple and two Tablespoons raisins in Smart Balance spread until apples begin to turn color. Add about 1/2 tsp. cinnamon. Set this aside while I'm cooking my eggs. I use about 1/2 C. egg substitute and season with salt and pepper. When I flip the omelet, I add the apple and raisins and sprinkle about 1 tsp. feta cheese on top.

    i just had 4 egg whites, sweet bell peppers, fresh chestnut mushrooms, cherry tomatoes, spinach, chopped chives, triangle of skinny cow blue cheese broken on top and some fresh ground pepper on top!...yum!

    I've eaten a lot of egg scrambles this past week!

    Here is my recipe:

    4 egg whites
    1/4 Roma tomato
    1/4 cup green bell peppers
    1/4 cup onions
    2 tbs. mild salsa (added during the last few minutes of cooking)

    Directions: Just scramble it all together.

    I usually like to serve it with 5 asparagus spears on the side. So yummy!

    The whole lunch is only 125 calories.

    Squash, zucchini, and mushrooms sauteed with a dash of Tony Chachere. Sometimes I'll add some cheese, either cheddar or fiesta blend.

    Last night I made Fritatta with leeks, potatoes, sweetcorn, tuna and mozzarella. With 8 eggs. Can be split up into 2 or 4 portions for quick easy lunches. Lovely with a salad x
