    Hi all,

    I am making macaroni/spaghetti sauce in my crock pot today. I just threw in my favorite stuff for sauce, some browned lean ground beef and frozen peppers/onions and topped with fresh parsley. When I get home all I have to do is cook the macaroni.

    Nothing fancy, but it sure makes a good quick dinner.

    I think I'm going to have to try this, crockpot recipes would make my life so much easier.
    my FAVORITE is salsa chicken.

    2 pounds of chicken breasts
    1 large jar of salsa
    1 can of whole corn kernels, drained
    1 can of black beans, drained

    put the chicken and salsa in the crockpot, cook on low for about six to seven hours.

    a half hour before, add the corn and black beans.

    it's sooo good! i make this at least once a week. sometimes i serve it in either
    a whole wheat soft tortilla or i'll use the flatout wraps.

    I am terrible at using my crock pot :( but I would like to use it more and become better at it!

    Easy Buffalo Chicken

    Throw in your crockpot -

    Chicken Breasts
    Franks’ Buffalo Wing Sauce
    Celery Salt
    Onion Powder

    Cook until you can pull apart chicken.

    Add in Laughing Cow Cheese at end of cooking process.

    You can eat it in a bowl or add to a Wheat Bun.

    Makes 10 servings.
    Prep Time: 10 minutes
    Cook Time: 8 hours on LOW or 4 hours on HIGH

    per serving
    Calories: 242

    Protein: 22 g

    2 1/2 to 3 pounds chuck pot roast, trimmed
    1/2 cup chopped onion
    1 package McCormick® Slow Cookers Italian Herb Chicken Seasoning
    2 cans (14 1/2 ounces each) diced tomatoes, undrained
    1/2 cup water or red wine

    1. Place meat and onion in slow cooker.
    2. Mix Seasoning, tomatoes and water until blended. Pour over top. Cover.
    3. Cook 8 hours on LOW or 4 hours on HIGH. Remove pot roast to serving platter. Stir sauce before serving. Serve with hot cooked noodles or pasta, if desired.

    Husband likes it over mashed potatoes. I usually have it over rice.

    Just made this last night. Sounds like a lot of ingredients, but easy to make & delicious:

    Latin chicken & blackbeans w/sweet potatoes

    3 lbs. bone in chicken thighs w/skin removed
    2 15oz. cans blackbeans drained & rinsed
    2 lbs. sweet potatoes peeled & cut in 2 in. cubes
    3 cloves garlic minced
    1 red bell pepper chopped
    cilantro
    1/2 c. salsa
    1 c. chicken broth
    lime wedges
    2 tsp. ground cumin
    1 tsp. paprika
    1/2 tsp. ground allspice

    Sprinkle chicken thighs w/ 1/2 tsp. cumin (or to your taste), salt & pepper. Cook in hot skillet until brown on both sides (approx. 5 mins per side). Place chicken on plate. In same skillet, combine salsa, chicken broth, remaining cumin, paprika & allspice (do not heat). Place sweet potatoes, red pepper & blackbeans in crockpot, layer chicken on top, & cover w/sauce. Cook on low for 8 hours. Sprinkle w/cilantro & serve w/lime wedges. Makes 6 servings.

    Have to try this one ... sounds delish!

    EVERYONE TRY THE SALSA CHICKEN! It was SO good...I just served it over rice, but you could serve it with black beans or shred it for tacos.

    In case you missed the recipe:

    1 lb boneless skinless chicken breasts
    1 can of healthy choice cream of mushroom soup
    1 cup of salsa
    1 packet of low sodium taco seasoning

    Put the chicken in the crockpot and sprinkle the package of taco seasoning on top. Then layer the soup and salsa and let cook for 8 hours on low heat.

    I didn't have a full cup of salsa, so I used some leftover diced tomatoes from the night before and minced some pickled jalapenos and threw them in. My chicken cooked on low for at least 10 hours (I forgot to set the crockpot to "keep warm" after 8 hours) and it was perfect.

    Red beans and Sausage. Soak beans in water/coke/salt or sugar till soft (coke and salt/sugar aid with this) rinse, put in crock pot with enough water to fully cover, add some coke (helps stop gas too), slice some sausage (i like hillshire farm), add any seasonings you like (i use garlic salt, grilling seasoning, seasoned salt, and pepper) slow cook for 10 or more hours.

    A favorite in our house is boneless skinless chicken thighs with lemon pepper seasoning and cream of mushroom soup.
