    This is in my crockpot right now! Thank you!
    Crock Pot Chicken W/ Black Beans and Cream Cheese

    Total Time: 4 hrs 3 mins
    Servings: 4

    4 -5 boneless chicken breasts
    1 (15 1/2 ounce) can black beans
    1 (15 ounce) can corn
    1 (15 ounce) jar salsa, any kind
    1 (8 ounce) package cream cheese

    Directions:

    1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
    2. Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
    3. Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
    4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
    5. All done and enjoy!

    I've got a book that's titled "Fix it and Forget it Lightly." Bought it at Books-A-Million. It's a great crock pot recipe book.

    A great one my husband and I loved is...

    chicken breast or pork roast
    One to two onions sliced
    A bottle of BBQ sauce

    - Slice onions and layer on the bottom of the crockpot
    - Pour half the bottle of BBQ sauce over the bottom of the crockpot
    - Place chicken or pork on top of onions
    - Pour remainder of BBQ sauce over chicken or pork
    - cover and set on low for about 6 hours (or high for about 3 hours)

    Once time is up take out meat and shred with two forks. Place meat back into crockpot and stir. Leave on low for another hour or two.

    This is a great one top pop in before work and than shred quickly before you go to Zumba. Place one buns when you get home for a great sandwich. I use the leftovers for things like wraps, stir frys, add on top of salads or mix into pasta and veggies.

    This one is great as you can make a ton to have for a variety of other meals. I normally add a large package of chicken when I do it and than it makes dinner that night, than a ton of leftovers for lunches and other dinners. So easy to pop in the freezer for later use.

    I recently took some out of the freezer and let thaw. I than added it to a stir fry of rice and veggies.

    1 whole pork loin
    1 bottle of root beer
    1 bottle of your favorite bbq sauce

    Cook the pork loin in the root beer on low for 6 hours.

    Remove and shred, discard the liquid.

    Put shredded pork back in the crock pot, add as much sauce as you want, and heat at high for a couple of minutes. BBQ time!

    Also works with Dr. Pepper!

    3 chicken breasts, 1 c salsa, 1 packet taco seasoning. Cook til done, then shred the chicken with forks and roll up in tortillas with some cheese and sour cream if you like. :)


    I make this too but I add black beans, corn and peppers. Great without a tortilla too!!

    check out www.skinnytaste.com I am currently making the pork carnitas slow cooker recipe and they are fabulous. My family loves it. I have also made the chicken pot pie soup and again it was good. She has easy to follow low fat recipes. Good luck!
