My favorite one is: Put in frozen chicken breast (as many as you want) and dump in salsa. That's it! Taste great and not many calories.

Martha Stewart's chicken curry is delicious. You can find it on her website.

I threw one together last night.

    3 whole chicken breasts
    1 jar of salsa
    1 can of Rotel original
    1 can of black beans
    1 cup of corn

I put it on high for about 4 hours and then shredded up the chicken or you can stick it on low for 8 hours.

Check out Skinnytaste.com. I made a crock pot 3 bean chili last week that was awesome! All of the foods on the website are reduced calorie.

bump - You can make anything in crockpots. My fams all time fav it beef stew. I don't really measure my ingredients so you may want to adjust. Sometimes I use more or less depending on how I feel/how the stew looks:
2 lbs stew meat (I like to let it marinate with some worschestire overnight)
4 potatos (I like the red ones) cut up
    1 cup mushrooms (optional)
    1/4 cup onion
1 1/2 box of beef broth (save about 1 cup to thicken later)
1 1/2 cup carrots (I use baby carrots)
    1-2 minced garlic cloves

Add beef and beef broth along with whatever seasoning and let cook for 4 hours. After 4 hours add the other vegetables. Cook an additional 4 hours or until potatoes/carrots are tender. Before you serve mix the remaining beef broth with 1/2 - 1 cup flour until there are no clumps. Mix into the pot to thicken.

I use a lot of different seasoning, salt, pepper, Basil, Parsley, Mrs. Dash (any) I usually wait to add the vegetables because if I put them in at the beginning they get too mushy.
