Take some boneless skinless breasts, smash them flat as you can get them (nice and thin). Spread a piece of low fat Swiss and a wedge of laughing cow lite cream cheese in middle. Roll it up and secure with toothpicks. Spray with fat free butter and coat with shake and bake EXTRA crispy. Bake in oven. My favorite with some (low fat prepared) mashed potatoes and corn! (Count your toothpicks though) you could even add some spinach or other veggie in the middle.0

Saffron chicken.
5 skinless, boneless thighs.
Salt and pepper
One onion
three cloves of minced garlic
Saffron
Sumac (spice)
Smoked Paprika
White wine
Salt and pepper the thighs,
Sear on both sides
Sprinkle with paprika
Remove from pan
1/2cup white wine to deglaze, add onions
Sweat the onions and garlic,
Add 1tsp saffron and 1tsp sumac
Add another 1/2 cup white wine and 1.5 cup of chicken stock
Add chicken thighs, cover, reduce to simmer
In 10-15 min, done. Delicious. Serve with veg, or over rice. The sauce is fabulous.0 -

Put it in a fryung pan , using "pam" or nonstick spray, add mushrooms and buttermilk dressing( 2 6ounce breast, and .5 cup dressing, cook till the chicken is no longer pink, and if u use light buttermilk, really lessons your calorie intake to under 200. For a side u can use red skin potatoes. Mashed or cubed with Pam in the oven! I love it!0
