  • I made a quick tweak that made this even more delicious. Replace the cocoa powder with sugar free pudding mix, yum!

    Ingredients:
    1 Scoop vanilla whey protein powder (I use Optimum Nutrition)
    1 Tbsp sugar free pudding mix ( I used butterscotch)
    1 tsp sugar or sugar substitute (I use Stevia in the Raw)
    1/4 tsp baking soda
    pinch of salt
    ¼ cup eggwhite
    2 Tbsp coconut milk
    1 Tbsp peanut butter

    Mix together dry, add wet and stir. Cook just one minute, do not over cook.

    I make lots of these, always trying new mug cake inventions just like protein pancakes. I have a blog dedicated to my recipes for clean eating and some other intolerances too. www.mycleanplate.wordpress.com :) My favourite is my chocolate one with a choc fudgey frosting....all clean!!!

    seriously guys i've been eating this nonstop. delish. i made it with egg whites only and 2T almond milk, and the macros i got are:

    calories 275
    carbs 14
    fat 11
    protein 36

    Can anyone who has made this tell me how many grams of protein powder you are using? Mine has quite a big scoop (35g), and it came out a bit dry. Not sure if too much powder or I just overcooked it? Want to try again as it was still pretty tasty.

    I just tried one using:
    20g of Sentosa high protein milk powder
    a bit of vanilla extract
    2 tbsp unsweetened cocoa powder
    a little bit of baking soda
    1 egg yolk
    16g jif extra crunchy peanut butter
    forgot: 60ml of low fat vanilla soya milk

    Not too bad! A bit bitter and not too sweet from the cocoa and no added sweetener, but I'm liking it.
