    Again killing me with these deserts.... wow just look so good. Anyways continuing with my cooking experiments' with mushrooms week dinner last night was buffalo ground beef tacos, with onions, red peppers, yellow foot mushrooms with black beans, feta. I could only eat one.... ecut2kclr8nw.jpg

    Brunch - Omelette with mushrooms, green onion, turkey, provolone, red bell pepper, and tomato; sides of strawberries and cucumber. Someone on another post gave me some omelette making tips (mine usually evolve into ramped up scrambled eggs) and it worked! Still need to work on the fold though. :D

    Hahaha I need those tips too, but I guess it relies a lot on the pan, and mine isn't too good... Looks delish!

    Here's her tips if you want em. My pan is older than time and it worked. The trick apparently is cook at lower temp and use a lid.
    I've been thinking about looking up a recipe for egg muffins and here one was today on MFP. Synchronicity!

    I was a horrible omelette maker too until a few months ago, actually. I found the trick for me was a well-greased pan set over a little under medium heat, pouring in the egg and milk mixture, letting it cook and set some for a few minutes. THEN I add my chopped additions and cheeses (veggies & either 2% shredded cheddar or reduced fat feta). Now I cover the pan with a lid, let cook covered with lid till things look mostly set, but not quite, then take up the edge on one side with a small spatula and flip that half on top of the other, cover again for a few minutes and turns out awesome. Oh, and I use a small (8 inch?) pan. I tend to make 3 egg (2 whites and 1 egg) omelettes. With all the fillings it turns out to be good for 2 nice meal servings for a chick.

    Made a pot of beans today, so just having a cup of those for dinner tonight. Pinto beans cooked in veggie stock with a large can of crushed tomatoes, onions, carrots, enchilada seasoning, garlic salt and pepper.

    dinner was a continuing mushroom challenge.... sautéed Hon shimeji mushrooms, onions, garlic, red pepper, buffalo roast cut up, white, brown and wild rice - buffalo has been on sale.... :)

    Sunday night I made double batches of Beef and Beer Stew (Pioneer Woman recipe) and Chocolate Gooey Butter cookies. Sent half of the stew and cookies over to a friend with sick baby, post-surgery husband, and a houseful of chaos...

    The hummus crusted chicken, do you use pre-packaged hummus and then just spread it on top of a chicken breast, then bake it?
    Exactly. You could make your own hummus if you'd like but I havent tried that yet
