I wish I had snapped a photo of this meal last night when I made it for dinner. As it is, here are the leftovers on a paper plate for my lunch at work. Arepas with crock pot carnitas, pickled red onion, avocado, mango and feta cheese:

I've been on a bit of a macaron binge lately. Banana kiwi, apricot balsamic, amaretto squash, caramel maple, spicy mango chutney and very berry

I love food! And cooking! And making healthier, more nutrient dense versions of my favorite junk foods. I don't eat meat or dairy, so I'm also experimenting with different versions of foods I used to eat that contain these items. If you want recipes for any of these let me know!

Another serving of the egg bake. Love to meal prep and then dont have to worry about what to eat.
The egg bake... how do you make that? Just a general idea is fine. I'm trying to do meal prepping for my work days and am looking for options. Breakfast gets boring with yogurt and oatmeal! But that egg bake looks awesome.0 -
Lemon yogurt panna cotta and mango bubble tea cream puffs. Fried polenta, meatballs. The mocha choco chip Quest bar is so tasty and I don't even drink coffee

octopus carpaccio with arugula salad and almond brittle

The first picture is tuna fish mixed w Guacamole and sun dried tomatoes in cucumber "boats". Sweet potato and green pepper on the side.
The second is broccoli slaw, red cabbage, goat cheese, dried cranberries, mixed with raspberry vinaigrette.
I bought too many fresh veggies this week and had to come up with some new ideas.0 -

Easy. Think about it as scrambled eggs or an emellette but multiply everything by number of serving you want to get out of it. Mix everything, eggs, milk, meat, veggies in a bowl, pour into a baking dish and bake at 350F for 30 min or until set. Cool and divide.

Drunken Pretzel burger from Rok Burger. One of the best! Yum!!! Pretzel bun, Vermont cheddar cheese, house made beer mustard and topped with onion rings.
