I've been on a "green goop" kick for the last couple of weeks, making dishes with sofrito, chimichurri, Italian salsa verde, and last night, Mexican tomatillo-based salsa verde.
Tonight, using yesterday's leftover batch of salsa verde: lemon-salsa verde marinated grilled (BBQ) chicken breast with salsa verde garnish topped with shredded cheese (microwaved to melt), grilled assorted veggies (mostly onions and multicolored peppers), side of black bean-corn salad. MFP tells me this plate is about 827 cals, 99g protein, 26g fat, 15g fiber, 54g carb. I'm on a 2000 cal/day plan, losing 20 lbs since New Years.
You can see the salsa verde peeking out from underneath the cheese. Like many things, this batch of salsa tasted better today than yesterday.

Another delicious vegan pizza: herbed potato cream, tofu scramble, arugula, oven dried tomatoes, asparagus, cashew cream hollandaise, chives. Tumeric black pepper ice cream, blackberry activated charcoal kombucha. Carrot cake and lavender blueberry cream puffs.

Surf n Turf and Surf n Turf. Put some jack daniels aged oak barrel chips on the grill and made Baby back ribs with Fukushima colossal shrimp and prime sirloin with grilled pink sea scallops. Grilled asparagus with balsamic portobello and roasted garlic and baked potato with German garlic cream sauce and fresh baked bread.

It's basically baked scrambled eggs with meat and veggies mixed into it. To make it precook your meat(s) and any veggies which take longer than a few minutes to cook such as potato. I generally start on the stove top by cooking cut up bacon and onion then possibly add other meats(sausage and ham) then add spinach to let it wilt in the bacon grease. Then any other veggies except tomatoes. Lastly I add the tomatoes, scrambled egg mixture and cheese and gently stir the mixture. Maybe add butter for flavor. I let the eggs partially set on the stove top then sprinkle a little more cheese on top and bake in the oven till to the desired consistency. Don't forget your favorite spices.
I refrigerate it and nuke a slice along with a glass of water each morning. Good topped with salsa or hot sauce. Maybe a dollop of sour cream.2 -

Last night i was cooking for one, so I made a tuna nicoise salad. 480 calories as logged. 44g carbs, 16g fat, 39g protein.
