Took a while to download my photos, but I still want to share them!
Foil-grilled Italian-spiced Alaskan salmon with parmesan baked fries:
Grilled chicken Caesar salad with antipasto bar:
Teriyaki tempeh, sesame fried veggies over japache noodles (yumyumyum):
lunch at work: chicken avocado salad sandwich (yumyumyum):
Lunch at work: super-green edamame salad and a really gross bottle of green kombucha:
Leftovers at work: Italian-themed polenta (I made it up- it turned out kinda weird):

Last evening: greek style chicken (baked on a bed of sliced red onion, tomato, spinach with lemon, garlic, herbs, low-fat feta), side brown rice and side asparagus.

Bacon and onions, next to nice fillet Of Large mouth bass I caught this afternoon.

Today’s my mom’s birthday so I made her favorite. Fried cauliflower “chicken” with yellow cauli rice and beans

Saturday was spatchcock chicken, fresh pasta in yogurt sauce, and broccoli.
Today was flatbread pizzas on naan bread. Pulled pork, caramelized onions, roasted chilis, and queso fresco.

Not much to look at while still cooking: roast chicken breast bites finished in a mixed veggie coconut curry stew, will be served over rice. I'm trying to figure out the MFP recipe numbers/counts now, but should be pretty reasonable.

Isaan food from vacation in Thailand. Not for the feint of heart. This is a bar snack of pork sausage served with raw green onion, raw chillis, raw chunks of ginger, raw chunks of garlic and peanuts to nibble on between bites of sausage.

Perhaps you could post/share the recipe for this dish!? It looks delicious! Thank you in advance. And, if possible, the recipe for a single serving? I find it better for myself if I prepare just enough food for that specific meal.. Therefore I try not to prepare to much food that there will be leftovers.

Yesterday evening I made Melanzane alla Parmigiana, in a lighter version than the original recipe (we divided this in two people, it was ca 430 cals each)

1. Cauliflower fried “rice”
2. Random beet and mustard roll
3. Mix ins for fresh spring rolls
4. Acorn squash with cranberry risotto
5. Tempera vegetable
As you can see I am not very healthy because I oil my food well but I am working on it. Vegetarian food is not always very satisfying and filling without making it a little bit unhealthy but I suppose that goes for all food.2 -

Baby gem salad with cherry tomatoes, croutons and vinaigrette laced with leftover pesto. Spaghetti mixed with spiralized courgette is a cross between aglio olio and puttanesca because there was a lot of oil packed sun dried tomatoes I needed to use up after buying a lot as a souvenir on vacation in Sicily last year. Oil packed dried tomatoes with anchovies, garlic, capers and olive slivers fried in it.

What do you eat for protein? Proteins (and fats) tend to be the most filling for many people.
I'm worried that based on your food examples and the fact that you say that you need to add oil to make vegetarian food satisfying that you're neglecting to eat complete protein sources?0
