One of dinners for one. Cherry smoked chicken breast (which I made about 20 at a time and freeze for future as single portions) quickly thrown on the grill with assortment of veggies, roasted sweet potato fries, guacamole and banana ketchup topped with home made greek yogurt = Chicken Tacos Tom's Way (CTTW) hahaha
Anybody can whip this up in 15 minutes.
Drool ... and I got stuck on "Banana ketchup" ... what's that? And how do you make it? It sounds yummy!

Dinner was herbal congee with grilled scallops and some mooncakes with green tea

The other half made three kinds of chicken to go with my yellow rice and cauliflower tomato goat cheese casserole. Bbq jerk, black pepper and scallion, and balsamic roasted red pepper with basil.

Made this the other night! So good! Zucchini is a great alternative to pasta.

This is a recent and favorite dinner: tempeh with vegetables (green beans and broccoli) in spicy peanut sauce, over rice noodles. A little higher in fat than my usual meal, but I use this kind of meal during a hard training week b/c I need the calories. Still no added fat to it, though.

I like to chop chilli, garlic, coriander, peppers and red onions with a TB of plum sauce and let my chicken marinade in it. Bursting with colours & flavours.0
