Gado-gado using a sauce paste that an Indonesian friend gave me. Sublime flavors.

Sous vide pork tenderloin taken to medium at 58C and reverse seared in the air fryer. I think next time I will use a cast iron pan as that is more precise. Hasselback new potatoes. Sauteed sugar snaps. Warmed up leftover hollandaise. The standard wisdom is you can't warm up leftover hollandaise but 10-20 seconds on the lowest setting of the microwave works for me. If it starts to split a little, it can be rescued by whisking vigorously with a few drops of cold water.

Pasta, peas, pesto (and ricotta)

Rump steak where I tried it at 56C instead of my usual 54C in the sous vide. I think I prefer it a touch rarer. Hasselback potatoes, roast asparagus with hollandaise and tomato salad. It was a dinner for kitchen gadget geeks. Steak done with the sous vide next to hasselbacks and asparagus in the air fryer and the bain marie for doing hollandaise.
Impressive. Steak looks perfect to me!2 -

Dinner was not an unqualified success. Starter of salade aux lardon was great, and reminded us of eating in Parisian cafes. Air fried hake fillets cooked from frozen and oven fries were overcooked.

Twice baked stuffed potato and a
Power blend (corn, lentils,peppers, and rice)4 -
Cambodian beef lok lak is meant to be made with thinly sliced steak, but we happened to have beef mince in the freezer. Stretched with 50% vegan quorn mince where the result was indiscernible from using beef only. For two people douse 200g-300g protein with a Tblsp of cornstarch and mix with two cloves of finely minced garlic. Mix the stir fry sauce of 2 Tbl fish sauce, 2 Tbl oyster sauce, a teaspoon each of tomato ketchup and sugar. Make the lime dipping sauce of a teaspoon of freshly ground black pepper with juice of a lime, two large pinches of sugar and a larc pinch of salt. Arrange two large plates of salad. Stir fry the meat and garlic mixture in a non stick pan with a little oil until brown and take off the heat. When you are ready to eat, fry a couple of eggs sunny side up and heat up the meat mixture with the stir fry sauce. Put both on the salad and spoon over the lime pepper sauce at the table. Rice is optional but we didn't miss it.

Today's lunch...
Aldi had some huge portobello mushroom caps and so I made the filling that I do for my lettuce wraps but I put it on a portobello mushroom cap...
So that would be a Honey BBQ Ranch Chicken, Green Onion, Bacon and Spicy Pepper Jack Cheese Portobello Mushroom type pizza topped with Mozzarella Cheese LOL
I seasoned the mushroom cap with red pepper flakes and some lower sodium BBQ seasoning, cooked it in my air fry oven, then made my filling and piled it in
Oh me oh my... that was deeelish!!

I found some non-breaded chicken patties at Aldi and they sounded really good. They are made of a 1/3 lb chicken patty with red onion, pepper jack cheese, roasted red peppers, jalapeno peppers, cilantro, spices and olive oil and so I made something I've never done because I found some zero-net carb bread and I built me a stack and then baked it in my Ninja Foodi Digital Air Fry Oven...
There is toast or bread on the bottom and then some spicy pepper jack cheese spread, then that flavorful chicken patty with all the stuff in it, then some cherry tomatoes, then the other half of the spicy pepper jack cheese spread and then the piece of bread with an egg on top surrounded by mozzarella cheese
