Chickpeas and Veg roasted in Jerk seasoning with a Lime & Coriander Skyr dressing.

Chicken thigh in a mustard sauce (very strong, I’ll have to tweak the ratios next time, but it was delicious!). Red bell pepper and broccoli from my last CSA box for the season.3 -
Halloween treats are happening here. Double chocolate ‘slime’ muffins and chocolate and pistachio cookies. I’ve only had one ☝️… so far 🤫🤪

Szechuan di san xian where potatoes and aubergines were cooked in the air fryer. Thai chicken with garlic chive. Sticky rice.

I never knew to cornstarch my chicken until I watched a Chinese cooking channel on YouTube. My kids love chicken and broccoli in oyster sauce and the chicken is so much nicer now I corn starch it. Thanks for the link, I will definitely try the recipe 🙂🙃1 -

Cornstarching any meat for Asian stir fries improves tenderness. I also do it for beef a pork. It's easiest to do it by shaking the sliced or cubed meat in a plastic bag or lidded plastic food container not too long before cooking. If you do it a few hours in advance meat tends to clump together so you need to separate it in the frying pan with a couple of wooden spoons.3 -

Egg, cheese and vegtables on a brioche bun. Hot sauce. A little butter toasted onto the brioche bun.5 -
Roast chicken, sweet potato mash, green beans with garlic and roasted broccoli 🥦6 -
Leftovers for dinner. Basmati rice and bon cai xao (=Vietnamese stir fried cauliflower) cooked today and warmed up leftover Thai chicken with garlic chive, and Szechuan di san xian from last night. Indonesian sambal goreng tempeh was warmed up from from a batch I cooked a couple of weeks ago and parked in the freezer. This was how my mom always put 4 different stir fries on the dinner table every night by combining warmed up leftovers with a couple of freshly made dishes.

Dinner was a bit of a fail. Starter of classic Caesar was nice. Main was meant to be pan fried haddock on tinned and frozen beans warmed up in shellfish bisque. The fish didn’t smell fresh so it got tossed in the bin. I won’t be using that supplier again.

Grilled toulouse sausage with oven roasted butter nut squash. Sausage made in house at a butcher shop. I added fresh oregano to the squash since my last plant has stopped growing new leaves and looks ready to die.

Courgette & Chickpea Dahl from a Meera Sodha recipe, with Rice and a Poppadum. Quickest, easiest curry ever! Really good, both calorie and taste wise!

A couple of work lunches from this week: palak paneer and a chicken mushroom soup. Both delicious!

Huevos Rotos (Eggs, potatoes, chorizo, pablanos)

Air fryer chicken wings cooked on top of air fryer roast potato (parboiled 3 minutes first before tossing in fat). Roast pineapple and red onion salad and roast cherry tomatoes with garlic confit. I would have normally tossed wings in a sticky sauce but both veggie sides were sweet so I left the wings plain with some ranch for dipping on the side..
