My mom's recipe for contact fried fish with ginger and spring onions with westernized som tam using julienned granny smith and spiralized carrots instead of green papaya. Sticky rice.

Roast pork shoulder with apples and onion was not an unqualified success. The recipe I used instructed me to put the apples and onions in when the pork had two hours to go which was way too long. That stuff was burnt to a cinder. Roast potatoes were put in for the last 20 minutes of the cook, and carrots were microwaved and glazed on the stove top.

@acpgee ... what was the recipe creator thinking? I can make applesauce in about 20 minutes stove top using apples cut into eights. I'm pretty sure 30 minutes in the oven would be more than enough. Otherwise that looks like a great idea for a winter meal.1

Next time I will add onions and apples 30 minutes before finishing. I will also reduce temperature to 120 in the air fryer. I did cut down total roasting time to 1.5 hours at 160C but the pork was still dry in parts.

Minced bulgogi bowl is a go to weeknight dinner at our place as you can make it and a vegetable side in the time it takes to cook rice. Accidentally pulled out pork mince instead of beef out of the freezer last night. Som tam on the side with hard to find green papaya substituted with a combination of julienned granny smith and spiralized carrot. Baldo rice was not quite sticky enough to eat easily with chopsticks.

We were meant to get a takeaway at the local Caribbean but they were out of ingredients for their seafood boils. Threw together a dinner from the freezer. Confit duck legs that had been cooked sous vide before going in the freezer, green beans that had been blanched and partly used for yesterday's salad was sauteed with almonds, potatoes par boiled for 3 minutes were tossed with the duck fat left in the sous vide bag and broiled for the 15 minutes it took to crisp up the duck skin. I cannot believe that duck confit has become a 20 minute meal if you don't count the 24 hours to cure and sous vide the meat, which can be done in a big batch in a bucket.

A colleague popped over after work and stayed really long because she was waiting for her workaholic boyfriend to head home. It was too late to cook after she left. We got a Sichuan takeaway.

Cauliflower, Leek & Red Pepper Cheese. Cheese Sauce made using just 8g oats (blitzed into flour) and Almond Milk. New idea to me but very good! With Asparagus & Salad.

I have been wanting a seafood boil takeaway from our local Caribbean all week but they have been having trouble with their shellfish supplier who has had a shortage of drivers. They promised that they would be sorted by today, but they were closed! Another quick slap up meal of air fryer chicken wings and roast potatoes, salad and cucumber sticks with ranch.

I finally got my seafood boil delivery on the 4th try from the local Caribbean cafe. Apparently Brexit has wreaked havoc at their shellfish suppliers.

Starter of boiled artichoke with hollandaise. Second attempt at main of roast pork shoulder with apples, onions and potato. Put in the apples and onions in later than previous attempt, so they weren't burnt to a cinder. Twenty minutes for apples and potatoes and 40 minutes for onions seems about right. Still adjusting the timing because the roasting joint required our household of two is considerably smaller than what most recipes call for.
