The first L'Eclair de Genie opened in North America today! Vancouver, BC :) I was the 10th customer. Pistachio raspberry, hazelnut praline, vanilla pecan and matcha. As delicious as they are beautiful!

Simple french omelette with an ounce of Kerrygold Blarney Castle Creamy Gouda and some pork bellies. Absolutely delicious. My second go at a french omellette. All my frying pans were cast iron up until now so I went and bought a new ceramic non-stick pan just for this. First time I made it I had the heat too high and it cooked too fast.
This one was perfect, IMO of course B). Just have to work on getting that really smooth texture for a better presentation (never thought I'd say that).

I found simple instructions at Food Wishes on the YouTubez. Chef John is very entertaining and easy to follow.

A flat dozen. Had to use the deep well cast iron skillet to hold it all. Forgot the onion in this batch.

@vegmebuff I got the recipe from a book called The Very Veggie Family Cookbook! It was super simple, just some onion and garlic, a can of coconut milk, a can of chopped tomatoes, a couple tablespoons of curry powder, a few spoonfuls of peanut butter and a can of chickpeas!
