Blackened ahi tuna salad w/avocado, cherry tomatoes, edamame, wasabi peas, greens, cabbage, sesame seeds, agave ponzu and miso vinaigrette from a restaurant. It was pretty good but on the sweet side so I think it would have been better without the agave.

Wednesday dinner: small tenderloin steak, 2 small Yukon Gold potatoes (golf ball sized - this picture is deceiving... that's a salad plate), baby peas

Thursday Brunch: had to be dropped off at the airport 3 hours ahead of my flight (long story), so I'm having brunch at my favorite restaurant here - the Westin lobby restaurant. Steel cut oatmeal with blueberries and a few banana slices and coffee.

Celeriac Mash topped with Balsamic (air fried) Baby Plum Tomatoes & Baby Chestnut Mushrooms. That’s a sliced Quorn Crispy Fillet on top.

Brought the client provided lunch back to my room to do some work. Baked chicken, roasted broccoli and mixed greens with lemon basil dressing...

Romaine salad with feta, cranberries and balsamic dressing, colorful roasted cauliflower and one bite of this terrible beef (tough and stringy - yuck). I went back for more salad and had an unpictured serving of lemon sorbet.

Cooking class night: coconut prawns with spicy green beans on jasmine rice

The Vietnamese cantine near the flat. Sweet potato croquettes and pho.

Asparagus over salmon on a bed of cubed sweet potatoes, spinach and tomatoes

Salad with stilton croutons and smoked chicken to start followed by linguine alla vodka.

Lightened version of Dongbei Guo Bao Ruo made with a chicken breast instead of pork. Instead of double deep frying according to the classic recipe, I coated chicken in the wet potato starch mixture and then seared with a scant amount of oil in a non stick pan to harden the batter, followed by 10 minutes in the air fryer. Hardening wet batters for things like tempura in a non stick pan is the trick for using the air fryer for this type of recipe. A veggie side of Sichuan smashed cucumber.

Tuscan dinner cooking class tonight. Spaghetti Aglio E Olio, pan fried chicken with Sage and lemon and a salad of arugula and raw zucchini (balsamic dressing)

Barbecue glazed chicken, skin on Yukon Gold mashed potatoes and roasted broccoli

Tried out my new rice cooker-steamer combo. The rice was good but I’ll have to adjust the amount of water next time. The fish was okay but it was frozen. Brussels sprouts were decent.3 -

Thursday - skipped breakfast. Lunch is 2 soft boiled eggs, an everything bagel with Tillamook cream cheese and coffee

Repurposed leftovers of roast beef turned into pho with broth we had in the freezer. We had some Vietnamese spring rolls in the freezer that were air fried. Rice noodles only need soaking in very hot tapwater for this. I got home late from work and managed to get this on the table in 15 minutes.

Low cal fish and carrot tempura. I dip the food in the wet batter, harden the batter on a low non stick pan with a scant amount of oil. They are ready to turn when they slide easily across the pan. Then finish for 10 minutes in the air fryer to crisp up. Next time I might just add the oil to the batter to have really good control of how much oil gets used. Not as good as deep fried, but pretty close. Side of Chinese aubergine salad.
